Today I finally tried your recipe but alas, I did not succeed. The outcome was that my bread was "too compact". Not as fluffy and soft as your picture. Do you have any idea why?? I used my stand mixer to knead about 10 mins. I did the first proofing for 1 hr and for the rest, I follow exactly yours. I don't have a baguette pan and thus used a regular baking pan, putting a baking sheet sprinkle with cornmeal flour. After baking for 10 mins, I realised the bottom part of the bread is not cooked at all. I have to turn over to bake another 3-4 mins. Is it because I knead too Long? Or I proof too short? The temperature of the place I was proofing was about 31 degree - my laundry area. :p hope you can help when you are available.
