My sister brought me some fresh bamboo shoots from her MIL house, i am glad that i can cook with these fresh bamboo shoots as those selling in wet market has some kind of awful smell...

Ya, one thing i need to clarify here. Recently i just realized that i should not write "dark soy sauce" in my recipe, actually i was meant " thick caramel sauce" as I just direct translated from Chinese 黑酱油. They are both difference sauces. I think only Malaysia and Singapore use widely of  "thick caramel sauce" but US & Europe hardly find this thick caramel sauce. This is the thick caramel sauce i use:-

600g chicken wing, cut into halves
500g bamboo shoots, sliced
3 stalks spring onion, cut 1” in length
5 slices young ginger
4 Chinese shiitake mushroom, soaked several hours, rinsed, sliced .
1 star anise

3tbsp light soy sauce
1 and ½ tbsp thick caramel sauce
1tbsp rock sugar
1tbsp Chinese Hua Tiao Chiew wine
Salt to taste

500ml water

Method
1. Boiled bamboo shoots in hot water for 5mins (add little salt) and rinsed.
2. Heat oil in a wok, sauté ginger and spring onion.
3. Sprinkle wine and light soy sauce, add in water and rock sugar.
4. Once water is boiled, add in star anise, chicken wings, mushroom and bamboo shoots and simmer till sauce is reduced, about 20mins.
5. Add in thick caramel sauce and adjust the taste.
6. Serve hot with steamed rice.

haha. i discovered this sauce recently and found that it taste so nice. So i start replacing with it when your receipe said 'dark soy sauce'. 误打误撞竟撞对了. :-)

I've never eaten bamboo shoot. No idea how it taste like, but I've heard how it smells like if the bamboo is not fresh.

I love bamboo shoot, but after since we experienced our neighbour giving us some bamboo shoot which were not very fresh and caused the whole house smelly, no one is willing to taste bamboo shoot at home anymore, ha ha ha. It's really stink if not fresh, I still love bammboo shoot though.

Your chicken looks delicious. This is perfect with a bowl of steamed rice. I like bamboo shoot and you are right, it is not often that we can find the really fresh good ones from the market.

It has been a long while since I last had fresh bamboo shoots. My grandma used to cook this so often for us as we had bamboo plants at the back of our house.

Sonia, I'm not sure why ppl complaining about the smell of the shoots. It tastes so sweet and crunchy. I think the one they had are not properly washed or cleaned. According to the lady at the market place, the shoots need a serious washing ... just like those pig stomach.:o)

Hi Sonia! I think Japanese soy sauce won't make these chicken and bamboo shoot this nice brown even we add more soy sauce. I have boiled bamboo shoot in my fridge that I haven't figure it out how to cook yet. Your recipe looks really delicious!!

This is such a homey and delicious dish. It helps to lightly boil the bamboo shoots first to get rid of the smell.

I love the texture of bamboo shoots. It's not easy to get the fresh on in Subang, so I usually resort to the canned ones. I agree with you the one sold in our wet market has a kind of strong smell.
