Yesterday my son Desmond was requested egg sandwich in the late evening, i rejected his request because dinner was ready and i was rushing to attend a gang dinner (my girl friends gave me thumbs up for the raspberry cheesecake ^_^). When i tried to wake him up this morning, he showed me his sour face. I asked him why you angry at me, he said because i did not make him egg sandwich yesterday, LOL.
So i quickly make this egg sandwich before he came back from school today..and this egg sandwich also one of the food that shared in the "Midnight canteen" drama 深夜食堂.
Japanese egg salad sandwich 鸡蛋三明治 (Tamago-Sando) ~深夜食堂
(recipe source: by Sonia aka Nasi Lemak Lover)
Ingredients
4 slices of bread, trim off the brown part
2 hard-boiled eggs
3tbsp Japanese mayonnaise
black pepper to taste
Salt to taste
Method
1. Mash hard-boiled eggs in a bowl or you may dice into small cubes.
2. Add in mayonnaise, pepper and salt, mix to combine well.
3. Spread the egg salad onto a slice of bread and top with another bread slice.
4. Slice into 3 equal sizes and enjoy!!

kym, ya, Japanese mayonnaise and local mayonnaise taste are difference, but you can replace with local one for this recipe, it also taste good.

ReplyDeleteHow funny! My son loves egg sandwich too! When we say egg sandwich, it means this kind and not American one. He was not happy when he saw American kind was served at lunch one time at a restaurant. :D I think Japanese mayo and the right amount of salt and pepper is the key... :)

ReplyDeleteTry using yogurt to substitute mayo...you can add a bit of honey to sweeten the yogurt...healthier choice.
ReplyDeleteSomedays I mash sweet fruits into the yogurt for a natural sweetness. Banana, mangoes and recently the gold kiwi goes well with yogurt and eggs:D
So simple yet full of motherly love!! These are the type of sandwiches only a mother will make them for their children ... fond memories ...
