Chicken and Tomato Pasta 番茄鸡肉意粉

The other day i bought a small pot of sweet basil and rosemary plants from Sungai Buloh nursery. The sweet basil still looking good but rosemary already half die..so sad..I prepared this easy and yummy pasta for a lunch the other day, love the nice aroma from sweet basil when toss together with this pasta.

I like to using fresh tomato to cook pasta nowadays, taste better than those ready pasta sauce from supermarket..slightly sour taste from tomato and nice aroma from sweet basil leaves, they just made this pasta tasted so refreshing !!

Chicken and Tomato Pasta 番茄鸡肉意粉

300g chicken breast, cubed

IMG_3545 copy 3 large tomatoes, cubed
8 cloves of garlic, thinly sliced

400g spaghetti

A handful of sweet basil leaves, chopped

Method

1. In a pot with boiling water, add 1tbsp sea salt and 3tbsp olive oil and cook spaghetti until al-dente. Drain and put cooked spaghetti in individual serving plate, set aside.
2. You may cook one serving at a time (taste better!) or cook all in one time. Heat olive oil in a frying pan, add in garlic slices and sauté till aroma.
3. Add in chicken meat, stir fry till color changed.
4. Add in tomatoes and mix well. Pour in cooked spaghetti water and cook till tomatoes turned soft, adjust the taste accordingly.
5. Top spaghetti with cooked chicken and tomatoes with the gravy, garnish with chopped sweet basil leaves, Enjoy!!

  1. Using the fresh tomato is of course good but some times the canned tomatoes has more flavourful because it was picked from the ripe ones which is better in taste. Your pasta ingredients are easy and simple.....

  4. Sonia, I suspect you rosemary is over hydrated. You do not have to water everyday. Do it only when the soil is dry.

    I made this mistake with my first pot of rosemary. Now, I have 3 healthy pots (supply) of rosemary!

    Nice pasta recipe but I prefer adding some mixed herbs.

  9. Simple and nice pasta, Sonia! Next time try and get a bigger pot of rosemary... I tried planting with a small pot before also died very fast.

  12. Haiyo, I hardly understand the comment above me la... What a long comment. ...

    Rosemary is suppose to be a very hardy plant but mine only survive after the third attempt. Basil also has it thrive season le...I love to plant my my own herbs and get it fresh from the garden when I need them.... Fresh ingredients make huge different on the taste of the food. So ..I believe ur pasta taste exceptional great with home made tomato sauce and fresh basil from ur garden.

    Oh..how's the pansy seeds I gave u...? Did u plant them or they are still sitting in the bag doing nothing? Haha!

  21. Sonia , the next time I buy a pot of basil , I'll use it right away or else it will die after a few days in my care ! lol

    That pasta looks simply delicious ! Will try using chicken instead of pork when I cook pasta sometime :)

    Keduanya...pasta mmg kegemaran kami seisi keluarga.Dulu saya selalu guna isi ayam yg dikisar tetapi sekarang saya lebih suka potong kiub seperti Sonia ni.Lebih sedap.

    Lain kali nk buat sos tomato sendiri.

  34. hehe funny, maybe it's because the weather here is much drier and cold, but the rosemary is doing well this winter while the basil's dying from the lack of sun :( the pasta looks yummy, tomato and basil is one of my favourite combinations!

  35. this is simple and yet comforting. I also have a pot of rosemary in my house, at one time i thought it's going to die too and i didnt bothe rabout it, after several weeks, i saw some new shoots coming up and it survived again!
