Vietnamese Style Fish with Turmeric & Dill 越式黄姜莳萝叶鱼

When i have sufficient amount of home grown fresh dill, time to cook this Vietnamese inspired fish dish.





From few trips to Vietnam, learnt that they like to use fresh dill in many of their dishes..


Vietnamese Style Fish with Turmeric & Dill 越式黄姜莳萝叶鱼

350g fish, cut into thick slices ( I use Siakap fish fillet)

For marinate
1 and 1/2tbsp fish sauce
1tsp turmeric powder
2 cloves garlic, grated
1 shallot, grated
A small knob of ginger, grated
1tbsp fresh Dill fronds, chopped
Black pepper powder


½ yellow onion, sliced
1 large bunch of fresh Dill, without stems ~15g
½ red chili, sliced
1 spring onion, sliced
Roasted peanuts

Method
  1. Marinate fish with marinate ingredients for 30mins.
  2. Heat oil in a non-stick frying pan, pan fry the fish on both sides until the fish is evenly browned.
  3. In the same pan, remind a bit oil, sauté onion, spring onion and chili till aroma.
  4. Add in fried fish and fresh dill, quickly and gently mix well and dish out.
  5. Garnish with roasted peanuts and more fresh dill.

  1. I hardly use any spices in my cooking, never use dill before. wonder how it taste like.
