Mini rice dumplings 小米粽

Any foods made with glutinous rice always one of my favourite's choice. This mini rice dumpling wrapped with wanton skin idea was inspired from my recent hiking trip at Taiwan. Breakfast that served at Taichung hotel was one of the best during our stay, one of them was this steamed mini rice dumpling.











Mini rice dumplings 小米粽
*makes 32

600g glutinous rice , soak in water for 4hrs
6 shiitake mushrooms, soak in water till soften
25g dried shrimps/Hae Bi , soak in water 5min then chopped
4 shallots, sliced
150g minced pork


Seasonings
1tbsp light soy sauce
1tsp dark soy sauce
1tsp sugar or to taste
1 and 1/2tsp salt or to taste
Pepper

1cup cold water
1 and ½ cup hot water

Round wanton or dumpling wrapper
Goji berries

Method
1.      Saute shallots till golden brown, add in dried shrimps, stir fried till aroma.
2.      Add in mushrooms and minced pork, stir to mix well.
3.      Add in soaked glutinous rice, and add in the seasonings, stir to mix well.
4.      Scoop the rice into a steaming tray. Pour in 1 cup cold water and mix. Steam over high heat for 10mins.
5.      Open the lid, add in 1 cup hot water, use a pair of chopsticks, fluff up the rice and stir well. Continue to steam for another 10mins.
6.      Remove steamed rice and add in 1/2cup hot water, stir well.
7.      Lay dumpling wrapper into each prepared greased cups. Spoon steamed rice into the cup. Level and press the rice with spoon. Place a piece of goji berry on top.
8.      Steam over high heat for another 15mins.
9.      Serve warm.
