-Sambal ingredients
- Nasi Lemak( fragrant coconut rice) ingredients
- Hard-boiled eggs
-Slices of cucumber
- Fried peanuts and dried ikan bilis
- a plate of yummy Nasi Lemak
-Best to eat with a glass of cool lime water
-a banana leaf-wrapped packet of nasi lemak (nasi lemak bungkus)
Steps to cook Sambal (Nasi Lemak chilli paste) and Nasi Lemak (coconut rice) :-
To prepare the Nasi Lemak (coconut rice)
a. Place washed rice, salt and knotted pandan leaves in an electric rice cooker.
b. Pour coconut milk over the rice and leave to soak for 30mins.
c. Cook the rice.
d. Once rice is cooked, leave it warm in the rice cooker.
To prepare the basic Sambal (chilli paste)
a. Heat the oil in wok, saute blended onion paste until fragrant.
b. Add in blended dried chilli paste and continue tumis (cook) for 30mins under low heat.
c. Add water and sugar and continue tumis (cook) for another 20mins under low heat.
d. Lastly add in sliced big onion.
** blended onion paste=Bombay onion ( a lot) + garlic (little) + shallot (little)
** Must put a lot of blended onion, oil and sugar. If you prefer stronger taste of sambal, you may add in shrimp paste (belacan) .
** You may add in ikan bilis, prawn, sotong & etc to the basic sambal paste.

ReplyDeleteI like the new header, much better! And the photos are great! My favorite shots are the wrapped packet of nasi lemak and the one after that.
And the first few shots of the ingredient is great too! Good choice in taking the photo outside using natural sunlight. Adding the flowers and leafs for plating are a nice touch too! Good job girl! You're getting much better now! I'm impressed!

Colin & Bakeling, I wanted to do this much earlier but I'm lacking of the skills and tools. Thank you very much for your guidance and encouragement, finally I managed to came out with this wonderful special edition. I guess this will be my permanent header unless I can come out with a better one in the future. You know what, my daughter and son told me that day nasi lemak was their best ever meal, I'm so touching. Do try out my nasi lemak recipe. Let us " Ja Yu".
ReplyDeleteColin, yes, I was waiting for the good sunshine to do this special edition, earlier was raining everyday. But now I realized that to become a good photographer is not an easy job, sweated under hot sun and busy pick up flowers (actuallly curi curi pick )in the nearby garden...

ReplyDeleteA Best selling Malay Nasi Lemak lady from Kedah gave me the recipe, her daughter was shocked as she never teach or give out her secret, while I was working in SDA Hospital 40 years ago. she said must add in sliced small onion, ginger and enough salt, pandan leaves. yes, Salt is very important as once I added less salt, the whole pot of Nasi Lemak is not tasty. Not too much santan, best is same santan and the rest is water.

I tried making nasi lemak rice a few times, but never quite seem to find the right proportion for rice/water/coconut milk/salt. I use canned coconut milk and maybe that's less good. Do you have a good advice for the right proportion? I tried looking at your nasi lemak recipes but did not seem to find a precise measurement :p Thank you!
Angie, sorry, don't think I can help you on the right proportion as till now I also can not get the perfect nasi lemak. Actually i dont quite often cook nasi lemak at home because we like to pack at a famour nasi lemak stall from outside. Anyway, once I manage to get a good nasi lemak, I will definitely share with your. Happy Blogging!

Btw, I'm from Indonesia, if Malaysia has Nasi Lemak, we have Nasi Uduk here. The main ingredients are pretty much the same, the difference is only the herbs, we use lemongrass and Indonesian bay leaf (daun salam).
And the sambal for uduk, we add galangal, lemongrass and Indonesian bay leaf (daun salam), some tomato and coconut milk... My mom likes to add roasted/fried peanuts+candle nuts, grind them and add to the sambal, they add extra flavour...
Next time we will try your nasi lemak recipe, must be great! ^^
