Lemongrass, Pandan leaves and Chicken baked in foil

I attended a cooking demo session at my husband's friend house the other day, the main purpose was to promote induction cooker. They use the induction cooker to cook this dish, and the taste was great, so I would like to share this simple recipe with you. It taste like salted chicken with full aroma of lemongrass and wine ..




- Place a lot of lemongrass and pandan leaves (screw pines leaves ) on a large sheet of aluminium foil




-Rub big sum of salt on the chicken (I use Kampung chicken), and place on top of the lemongrass and pandan leaves




- Add some Chinese wine ( Tiew Heng wine), and wrap the foil neatly. I use oven to bake instead of using induction cooker, bake at pre-heat oven for 30mins at 200c.

  5. Induction cooker?! Is it expensive? Is the baked chicken better than the one from the induction cooker? I have a lot of question don't I? Hahaha...

  9. Wow, I want to try this recipe too! But one problem, my hubby doesn't eat white skin chicken. Maybe I would do some drumsticks for myself and the girls. Hehehehe...

    reanaclaire, RM16 consider not so expensive, I bought this bird of kampung chicken, already cost me RM14..

    Anncoo, I just pluck lemongrass and pandan from my garden, so consider organic , very healthy ler..

    Colin, okie okie, not many questions lar, the induction cooker is very expensive, RM3k for a set, I didnt buy it so I use oven to bake, and it tasted no difference using both methods.

    Big Boys Oven, if roast it, I afraid you can't have strong lemongrass and pandan aroma..

    ICook4fun, ya, not many peoples own the induction cooker but sure have a oven, then everyone can try to cook this simple recipe.

  14. This looks really authentic... I like the touch of asian flavour in this... lemongrass and pandan together all up... I can imagine how good the taste would be... you are right to choose kampung chicken, cause they are same like free range chicken, more muscular and meats are more juicy and tender too...! when I bake my chicken at 200, it takes nearly 1 hour, sometime pass 1 hour to bake a medium chicken, is it because my oven rosak liao?

    Nancy, very easy lor, lemongrass, pandan, salt and wine, 4 ingredients, thats all..

    Mia, these two herbs easy to get it when we are in Asia, most of the family sure can get some from their garden..I bake at 200c for 30mins, I feel it was a bit long, can reduce to 25mins, did you pre-heat your oven?
