My kids requested me to bake Gingerbread man cookie but without ginger taste as they dislike the ginger flavour. So what I did ? I changed ginger powder to cocoa powder, thus I can not called this as gingerbread man cookie, it has changed name to "Chocolate man cookie" , Ho Ho Ho!!!
-My daughter did all the icing decoration.
-These "Hypo" are so cute !!
-my daughter specially made a perfert chocolate man cookie for me.
Chocolate man cookie
225g flour
1 tbsp rice flour
90g brown sugar
1/4 tsp of baking soda
a pinch of salt
125g unsalted butter
2 tbsp cocoa powder
1 egg-lightly beaten
Steps:-
1. Beat butter, salt and brown sugar till creamy
2. Add in egg and mix well.
3. Mix in flour and rice flour.
4. Cut to desired shape.
5. Bake at pre-heat oven at 180c for 16mins.
To make lemon icing:-
Whisk 1tbsp of lemon juice with 100g icing sugar to form a soft icing.
Fill the icing into a piping bag and decorate as desired.
