Banana cake

There is nothing better to enjoy a slice of banana cake (maybe more) in a lazy afternoon tea.

I was try to use my new toy (KA mixer) to make this banana cake, but i realized that a simple hand mixer is more convenience when you prepare a small cake like this, hehehe..


Banana Cake
*makes 1 loaf tin 21.5cm x 11.5cm
(printable recipe)

125g butter
70g sugar
2 eggs (large)
125g cake flour
1/2tsp vanilla essence
1tsp of double action baking powder
150g mashed banana

1. Sift cake flour and baking powder in a bowl.
2. Beat butter with the sugar until pale and fluffy.
3. Add in egg one at a time, add in vanilla, mixing well.
4. Fold in flour and mashed banana, combine well.
5. Pour cake mixture into cake tin.
6. Bake in pre-heated oven at 180C for 30mins or skewer come out clean.

    I like the golden crust of ur banana cake.

    I just wonder why it's not convenient to use a KA mixer for this cake.

  4. Banana cake! I am sure my husband would love it because he really likes banana, same with my bunnies (unfortunately they are not allowed to eat cakes of course with banana or not ;)!)

  18. agreed with u...we are not a heavy user most of the time so sometime still think the std size one more convenience . i bought the kenwood mixer is mainly for bread making only. haha

  22. love banana cakes! To be honest - i would prefer banana cakes over those creamy-cheesy cakes. I find banana cakes more healthier and tastier to my taste :) Thanks for sharing. love ur post!!

  25. There are some things that is more convenient with the hand held mixer, and it's rather indisposable, even when the stand mixer is around, especially when it comes to beating eggs above hot water or over the stove.

    Just like Swee San said, I want to see a slice of the cake, can???? Cos the outside looks so yum.
