My entry to Wendy's sponge pancake giveaway

In order to support Wendy's latest sponge pancake giveaway, I have created two recipes and here are my submission:

1st Entry-Green Tea sponge pancake with red bean paste

Green Tea sponge pancake with red bean paste


Simple recipe:-

1 egg (large)
1 tbsp sugar
1 tbsp all purpose flour

a pinch of green tea powder
3-4 tbsp red bean paste

Method:-
1. Separate the egg, beat egg white with sugar till soft peak.
2. Lightly whisk egg yolk, add in egg yolk, green tea powder and sift flour into egg white mixture, slowly fold the batter till incorporate.
3. Heat a non-stick pan over low flame, pour in the batter, swirl it around to coat.
4. Put in red bean paste, cover with lid and cook until sides look golden, and center of pancake is cooked.
5. Flip into half or just flip onto plate.
6. Dust green tea powder over the sponge pancake.

2nd entry- Ham and Mozzarella cheese sponge pancake

Ham and Mozzarella cheese sponge pancake

Simple recipe:-

1 egg (large)

1 tbsp all purpose flour

3-4tbsp grated Mozzarella cheese
1 pc Ham, shredded
1 sprig spring onion, chopped
1/2tbsp Olive oil

Method:-
1. Separate the egg, beat egg white with sugar till soft peak.
2. Lightly whisk egg yolk, add in egg yolk and sift flour into egg white mixture, slowly fold the batter till incorporate.
3. Heat a non-stick pan over low flame, add in olive oil, pour in the batter, swirl it around to coat.
4. Put in shredded ham, chopped spring onion and Mozzallea cheese, cover with lid and cook until sides look golden, and center of pancake is cooked.
5. Flip into half or just flip onto plate.
