This is Szechuan pepercorn, replaced with black peppercorn if you can't find this.
Stir fried chayote and beef
(source: inspired by a TV Vietnamese food show, re-created by Sonia aka Nasi Lemak Lover)
1 medium chayote ( about 350g), remove skin and seed, sliced thinly
200g beef, sliced thinly
4 cloves garlic, chopped
1/2tsp Szechuan peppercorn
1 sprig spring onion, cut 1” length
1tbsp fish sauce
1tsp sugar
1/2tsp salt or to taste
Method
1. Marinate beef with fish sauce and sugar for 1hour.
2. Heat oil in a non-stick pan, quickly stir fry beef till color changed, not more than 1min. Set aside.
3. Heat little oil in a clean wok, sauté garlic till fragrant, add Szechuan peppercorn and chayote slices, cook for 2-3 mins, add little water if too dry.
4. Return beef to the wok, quickly mix well with chayote, add spring onion, seasoning with salt.
5. Dish out and serve hot.

I love chayote or Sousou as we called them in S.Africa. They seem to have many names! They grew so well in our garden there and I learnt to cook them so many ways. Even my dogs loved them! We had so many!! I am going to try and grow them again when we make the final move to France as I have seen them there on the odd occasion. Diane
