Grilled Rosemary chicken

A simple grilled Rosemary chicken with mashed potato and salads for a light dinner when we have bored of keep eating the same Asian style of meals...

I did not recorded down the actual measurements as I was busy preparing the Rosemary Focaccia.

Actually this is not that difficult to prepare, these are what I did:-

1.Grilled rosemary chicken- marinte chicken (boneless) with sea salt,ground black pepper, chopped rosemary and some garlic slices for 1hour or more. Pan fry chicken over a non-stick pan with Olive oil.

2.Mashed potato- cook potato and mash it, add milk, heavy cream, pepper and salt, and mix well.

3.Brown sauce- Add water into the same bowl that use to marinate chicken, and also add oyster sauce, ground black pepper, sea salt and sugar. Cook the sauce over the same non-stick pan  that use to fry chicken, thicken by add in few tbsp of flour.

4.Store bought ready to eat salads set.

  11. Hi Sonia,

    I have cooked pan-grilled chicken with rosemary umpteenth times. It always taste so wonderfully fragrant when I pan grill the chicken on top of the rosemary leaves. Of course my presentation is no where near yours which is so artistically displayed.

    I got my rosemary leaves from Tesco and keep it in the fridge. I continue to use it even when it is dried up because it's still very fragrant. Sometimes when I brew Chinese tea, I will add some dried rosemary leaves as well. The tea smells just ever so fragrant. Try it and you'll know what I mean.

  25. This simple meal looks absolutely divine! I agree with you that sometimes we need to twist around. Cannot always have Asian food, it could be quite boring. Look, you've made a five stars meal, there is no reason for not dining at home.

  41. Yes, this is really easy. I cooked this all the time at home when I feel lazy to cook. I put potatoes and veggies and baked them with the chicken at the same time. Delicious!
