Here i would like to share with you the another bloggers gathering i attended during CNY. We had a potluck and BBQ party at Reese's place at the poolside. All of them i had met except Quay Po Cooks. I also learnt the salmon otak-otak from Quay Po cooks which is very yummy and my kids love it especially my little son Desmond.

Here is the Salmon Otak-otak recipe that i learnt from Quay Po Cooks. But I changed a bit of her recipe because i could't find the betel leaves (i replaced with kaffir lime leaf) and galangal leaf ( i replaced with galangal "blue ginger").
Salmon Otak-otak
(recipe source: adapted from Quay Po Cooks with minor changes)
500gm salmon fish fillets, cut into 12pcs
A) Blend into paste:-
5 pieces red chillies, seeds removed and sliced (don't remove seeds if prefer more spicy)
2 stalk lemongrass, finely sliced
1” of galangal, chopped
5 pcs candlenuts
1 small pc shrimp paste
4 cloves garlic sliced
5 shallots, finely sliced
1.5 “ fresh tumeric
B) Ingredients
100ml thick coconut milk
2 small eggs
8 pcs kaffir lime leaves, removed the spines and finely sliced
½ tsp ground white pepper
3/4 tsp salt
2 tsp sugar
1/2tsp fish sauce (not in original recipe)
C) Leaf use to assemble Otak Otak
20 pcs betel leaves (blanch in boil water and let dry) – I replaced with kaffir lime leaves 12pcs
12 pcs of 8 inches x 8 inches banana leaves, cleaned and soften (see Quaypocook’s video on how to soften the leaves)
Method
1. Clean fish, remove skin and cut them accordingly.
2. Blend ingredients (A) . Then mix spice paste(A) with ingredients (B) till a thick paste.
To assemble Salmon Otak-otak
1. In each banana leaf, place 1 kaffic lime leaf.
2. Place 1pcs of salmon and spoon the paste enough to cover the piece of fish
3. Wrap and secure the folds by using staples or toothpick
4. Place the parcels on a steamer and steam appx 10-15mins or until fish is cooked.
5. Serve hot.
Today, Quay Po is inviting us to her house for a lunch, can't wait to taste all her yummy foods..
My son Desmond was so happy and made a high jump beside the poolside !

ReplyDeleteTry asking the Malay herb stall for Daun kadok (betel leaf), and daun kunyit. It's not daun lengkuas leh. I think Quay Po may have mistyped the name. I think la.
But then hoh, I truly love her otak, very very nice.

Great fun to have a group of foodies together. I wanted to try out this recipe too but I don't think I can get tbe bettle leaves here. I do have some frozen daun kunyit.

ReplyDeleteSonia, I use galangal but not the leaves. I also used 4 petals of bunga kanta not 4 leaves of galangal. Aiyoh!! When I typed the recipe, I somehow mixed up the two hehe... You know lah, old already the my brain does not coordinate well with my fingers! A thousand apologies! Your otak-otak looks awesome and thanks for linking your post to mine. It looks a lot like these Latin American cooking style where the flavor come from the leaf. That's very interesting.
