Dragon cookies 龙饼



Today post will be talking about dragon and dragon..The 1st dragon i want to talk about is this dragon cookie. Since this year will be a Dragon Year, and my son Lucas also born in Dragon year in year 2000, so dragon cookie is very meaningful for this Lunar New Year.

I did not success making this cookie at the 1st time, actually after i attempted for 5 times, i would said i managed to make this cookie that suit my taste, melt-in-mounth and look white. At first i tried with a recipe from the owner of the bakery ingredient shop that i usually go. But i got a crunchy and slight hard cookie (i feel this was due to adding egg white). I never give up, i saw a recipe in a cookbook and give a try again, this time i got a super hard dough and no way i can pipe it out, totally not work out..this recipe called to add too much of flour!! No choice, I made up my mind, i want to mix and match and come out my own recipe, i tried the 3rd and 4th times, and success on the 5th attempt!

This was the 1st attempted, crunchy and slight hard, and i dont like it look yellow with very strong custard taste.

If you not pipe properly, it will be looking like a snake, hehehe..

80g Butter
Dragon cookies 龙饼50g icing sugar
1 egg yolk
120g corn flour
20g cake flour
10g milk powder


Method
1. Cream the butter and icing sugar till light and creamy.
2. Add in egg yolk and mix well.
3. Fold in corn flour, milk powder and cake flour to form a soft and pliable dough.
4. Fill soft dough into piping bag (use thick bag instead of disposable bag) with nozzle tip no 20 and pipe out or press out ‘S’ patterns on baking tray lined with baking paper. Dot eyes with red colouring.
5. Bake in preheated oven at 160c at lower rack for 15-17mins or till light yellow.

The second dragon i want to talk about is this First Cover from Pos Malaysia released yesterday. The topic of the stamp issue is "The Legacy of Loom" consisting a set of 5 stamps (in format of strip) with denomination 60s each, and two miniature sheets with denominations of RM3 and RM5 (with gold imprint). I'm not a stamp or First cover collector, but i was attracted by this nice dragon stamps. I was so lucky yesterday as I am the only one who managed to buy the only two RM 5 miniature sheets contain an image of gold dragon at the mini POS office nearby my house and don't need to queue. This mini post office only have 2 of RM 5 miniature sheets from their head office. This morning i got to know from newspaper that peoples are queuing start from 4.30am in the morning for this Dragon stamp.

I also got to know from Sin Chew Daily newspaper, the dragon stamps in 2000 year of Dragon year are being auctioned in Shanghai for RM 1,500. So I need to wait for another 12 years, ^_^

I hope the stamps will bring my family with good luck in this Dragon year..

I think I had these cookies when I was young but in round shape & had very strong milky taste which made me loved eating them very much! 5 times for a "sifu," hmmm, shall I try making them?hehehe.I've posted my Bakkwa, guess what, I collected 3 recipes, at last I chose to use the 4th version, ie your version, the safe version, hahaha

  25. I baked this cookies too few years back, but I remember that it's not so easy to pipe out, so I didn't manage to get a dragon shape, more to a snake, haha! Love your stamps, I read from newspapers that a lot of people lined up early in the money for that dragon stamps lo.

  52. Sl, no, cake flour is low proteinflour and use to make cookie light. If you can't find then replace with plain flour.

  54. I didn't know that Pos Malaysia actually issued dragon stamps. Only heard about the Legacy of Loom stamps. Tried to get it on 17 Jan (Tues) to mail out my CNY cards but they were all sold out! I love sending out cards or letters. My friend said she got only 1 Christmas and 1 CNY card. Both were from me. Sending greeting cards is ancient these days! Many either send sms or e-card. Ha ha...we are both ancient then! Who cares when we can bring joy to our friends and families when they receive our cards, right?

    Btw, I plan to bake tomorrow. It'd be the first baking I am doing for CNY. Hope my cookies will be successful like your little dragon cookies.

    I made this cookie yesterday and comments from 'cookie testers' were it taste more like Kuih Bangkit than Dragon Cookie. the corn flour that I used has this on its packaging. 'Corn flour (maize flour)'

    Do you think I am using the wrong corn flour, and that I should use corn starch instead? Or is there really no difference?

    Or maybe I baked it too long that's why it's slightly harder like Kuih Bangkit. mmm, mysterious...

  60. Confused baker,usually I buy corn flour from bakery ingredients supplies shop, not sure the brand you use got any difference! No don't use corn starch..

  62. Hi Sonia, thank you for your lovely dragon cookies recipe. I tried 2 times to make the cookies but the dough were very hard.. End up in the gabbage bin. I am staying in Canada, I cannot get corn flour instead I use corn starch. Please advise the whether my failure because of using corn stach ?. Waiting for your advise. Tq

  66. I really love dragon cookies, and couldn't be happier to stumble upon your post. The dragons look really nice. And so I had my first attempt last night.

    While I was really happy with the way it turns out, powdery and all, I had difficulty piping them. The dough was just too hard. Is there any tip on how to pipe them successfully?

    I ended with round cookies. Still melt in the mouth, but would have been better if they are in snake shape.

  67. IZ mum, yes this dough is quite dry so if you use normal disposable pipping bag, don't think you are able to pipe , try to use those thicker piping bag or maybe you can try with those cooking press ?
