Glass noodles soup 冬粉汤


This is a bowl of humble and old fashioned noodles soup that we like, no luxury ingredients are added. We especially love to add Tong Choy (a kind of preserved vegetable) in this noodles soup...

Glass noodles soup 冬粉汤

500g glass noodles, blanch in hot water


Stock
3 litre water
Glass noodles soup 冬粉汤 A handful of ikan bilis ( anchovies)
150g soy bean, soaked in water for 4hours
2 large onions
2tsp salt or to taste


Garnishing
Spring onion, chopped
Red chili, chopped
Fish balls
Fish cake, sliced
Tong choy (preserved vegetable)
Fried garlic oil
Fish sauce


Method


1. Add all stock ingredients in a large pot, boil over low heat for 1-2hour.
2. Blanch fish balls and fish cake slices in the stock. Set aside.
3. To serve-Place glass noodle in a serving bowl, add Tong choy and few drops of fish sauce then pour stock on it. Garnish with fish balls, fish cake slices, spring onion, red chili and garlic oil. Enjoy while hot!

  3. I enjoy glass noodle more than beehoon and this kinda clear ikan bilis soup is my top favourite soup.

    Soy bean.... is it the white-color bean ppl used in dumpling making?

  8. Sonia , I love your homemade stock ! I've never made homemade stock before and I usually use canned broth or chicken powder to flavor the soup tsk ! The noodles looks so appetizing and scrumptious ! I also love to add that preserved veggie ;D Yummy post as always !

  9. "Tong Fun" is one of my favourite noodles. A simple noodles soup is just healthy and appetizing. Tong Choy in the soup makes alot of difference in the taste, right?

  10. A simple dish like this looks so special when it was you cooked them! I seldom make noodle soup at home as I don't know how to cook a pot of soup that tastes sweet naturally! Looks like I need to use soy bean? Interesting!

  12. This is TOTALLY my kind of soup! I love the preserved veggies you put in. Fish balls and fish cakes are my favorite and I can warm up my body. In that sense, this is better than oily ramen! =)

  24. so light and yummy! one of my favourite dishes too, and actually quite simple to make! I love tang hoon, much healthier than a packet of instant noodles, but it cooks just as quickly!

  33. yes, often when I think of Tung Hoon Soup, I think of fishballs and Tong Choy. But I never like Tong Choy, don't know why.

  41. I use red onion, just cut into few pieces, Once done, discard all stock ingredients and just use the stock only.
