Simple chocolate cupcakes


Just now my daughter requested me to make cupcakes for her to bring to orphanage house tomorrow. Her school teacher will bring them there. I have been thinking to make cupcakes for large amount because I want to try the 24-holes muffin pan that I bought from Melbourne’s trip. I was so happy to accept this order ^_^

I like the size of this 24-holes muffin pan, mini and handy!

I have some leftover dairy whipping cream, so i replaced milk with whipping cream and resulted a very buttery and soft butter cake! I find the cocoa aroma is not that strong, next time i might increase the cocoa powder in this recipe.

Simple chocolate cupcakes

*makes 28 mini cupcakes


125g butter
IMG_4470 copy 100g fine granulated sugar
3 eggs (medium)
115g cake flour
20 g cocoa powder
1/2tsp double action baking powder or 1tsp baking powder
4tbsp dairy whipping cream


Chocolate rice


Method
1. Line cupcake liners on the cake pan.
2. Sift flour, cocoa powder and baking powder.
3. Beat butter and sugar till fluffy and pale.
4. Add in egg one at a time, mix well.
5. Add in flour and whipping cream alternately, combine well.
6. Spoon batter into cupcake liners, sprinkle chocolate rice on top.
7. Bake at pre-heated oven at 180C for 20mins.

  2. 哇!看看材料成分,发觉这个muffin真是小小而已leh。非常的可爱,而且用了五颜六色的纸托来准备,真是搭配得恰恰好的。你就是那么的pandai了!嘻嘻嘻。。。。。。
    下次我也要试做这个。因为我爱chocolate蛋糕。咔咔。。tapi hor,我要做大个一点的杯子蛋糕。因为我的嘴巴比较大嘛! :)

  9. 呵呵!我个子不高,但是hor我的嘴巴也不小。。。哈哈哈!可是,有美美的纸托称托美美的小蛋糕,我还是ok的。。。不介意一口气爆吃五个!哇哈哈 XD

  24. Wow, the 24 hole muffin pan is so beautiful..... If you are baking for a big batch, this muffin pan is just the right one instead of waiting for the next batch. Good for you to source baking utensils from overseas because other countries have unique kind of pans, utensils etc.

  25. Mrs Q, just measured, the size of top part of this muffin is 45mm..the normal 12holes muffin pan is 70mm..

  29. Wow this muffin pan is so convenient and I love how you can make many but small size... perfect for kids (huge cupcake is just way too big and too much!). Love your colorful liners and delicious chocolate cupcakes in it. :-)

  31. Hi, i m still young in baking, and i found tat every time my baking i always get burn in the bottom cake. how m i going to adjust the temperature? yesterday i also try baking cupcake n is the same. burn in bottom. can u give me some advice? thanks. i love the cake u bake it is very nice.

  34. Yesterday I went window shopping and saw this 24 mini cupcakes baking pan (but it is not the brand of Baker's Secret)! In your kitchen you must have alot of different sizes, moulds and patterns of baking pans!
