Chinese New Year Delights 2013_round up (12)

Wow! i have received more than 560 entries up to yesterday, and i still hard working compiling the rest now. Thank you very much for your full support !!
This time, we have few non Chinese bloggers that from oversea, check them out..And i find one very interesting cookies, hae bi (dried shrimps) cookies, i have never tasted this type of cookie before..Here we have total 85 entries, still sweet delights more than savoury delights !!

Dried Shrimp Cookies


Ingredients:
200 gm plain flour
50 gm corn flour
50 gm unwashed dried shrimp - blend it till fine
1 tsp ikan bilis granules
200 gm margarine
100 gm castor sugar ( i used superfine castor sugar)

Methods:
1) Sift flour & corn flour together
2) Add in blended dried shrimp and ikan bilis granules
3) Beat margarine & sugar till creamy
4) Add in the sifted flour and kneed till soft dough
5) Shape into small balls
6) Bake 180 degree Celsius for 20 minutes

Yee Sang

Ingredients:
Pickled ginger - finely shredded
Kaffir Leaves - finely shredded
Coriander herbs - only the leaves part
Pomelos / Grapefruit
Roasted peanuts - crushed
Roasted Sesame

Carrots - peeled and julienned
Daikon - peeled, julienned, and squeezed out some juice (to lessen the bitterness taste)
Taro / Yam - peeled, julienned, divide into 2 portions.
1 portion - add few drops of red colouring, and mixed
2 portion - add few drops of green colouring and mixed
Let it marinate and dry over nite and then deep fry..
Wanton skin - cut into strips and deep fry

Salmon fish - raw, sliced thinly, 5 minutes before serving, add in few drops of sesame oil and Chinese wine

5 Spice powder
Plum Sauce

Arrange all ingredients into a big plate, add in the salmon lastly, and then follow by plum sauce.

Ladies' Kisses from The Cookie and Biscuit Bible by Catherine Atkinson


Ingredients: (makes 40cookies/20pairs)
150g butter (softened)
115g sugar
1 egg yolk
1/2 teaspoon almond essence/extract
115g ground almonds
175g plain flour (sifted)

Filling:
50g semi-sweet chocolate (melted)

Method:

1. Cream butter and sugar with an electric mixer until light and fluffy
2. Beat in egg yolk, almond essence, followed by ground almonds and flour until evenly mixed
3. Chill in refrigerator for about 2 hours or until firm
4. Preheat oven to 160C. Line baking sheets with parchment paper
5. Break the dough into small pieaces and roll into balls with both hands
6. Place the balls on the baking sheets, spacing them out as they will spread in the oven
7. Bake about 20 mins or until golden, let cool on the side
8. Melt chocolate in a bowl over a pan of simmering water
9. Use it to sandwich the cookies in pairs, leave to set before serving.
