Mandarin Oranges Decorated Chiffon Cake 橘子心型威风蛋糕~~欢喜过马年


Today is Western's Valentine Day and also Chinese's Valentine Day (Chap Goh Mei), double happiness. I made this cake which has both West and East elements. Mandarin orange represented Chap Goh Mei, and heart shape chiffon cake represented Western Valentine. Wishing all have a lovely celebration today!!




 
When i returned to hometown during CNY day 2, my brother was so happy told me that he has two can of abalone inside the hamper that he has received. After he opened the hamper, and realized that that two cans was mandarin orange but not abalones. When he first see this brand, first sure think of abalone as this brand is famous of can abalone.We had a good laugh of this ,hahaha..
He don't know what to do with this, so I offered to make cake using this Mandarin oranges.
 


We will cut this cake tonight as I organizing a family gathering at my house, so I can't show you the inside of this cake. I will try to post a picture later if I have opportunity to take a picture ya..


Mandarin Oranges Decorated Chiffon Cake 橘子心型威风蛋糕
*makes a 17cm chiffon

3 egg yolks
10g sugar
30ml corn oil
60g Mandarin orange paste ( blend 30g canned Mandarin oranges with 35g light syrup from the can)
60 cake flour

3 egg whites
35g sugar
1/2tbsp corn starch

To decorate-canned Mandarin oranges, pistachio, non-dairy whipping cream, mint leaves

Method
1. Using a hand whisk, whisk egg yolks and sugar till pale.
2. Add in corn oil and Mandarin orange paste, mix well.
3. Add in flour and combine well, set aside.
4. Beat egg whites over high speed till foamy.
5. Slowly add in sugar (3 batches), beat till soft peak form, add in corn starch, continue to beat 1min.
6. Take 1/3 portion of egg white mixture and use hand whisk to mix with egg yolk mixture till light.
7. Fold the balance of egg white mixture into egg yolk mixture, combine well.
8. Pour cake mixture into baking pan and bake at pre-heated oven at 170c for 35mins or adjust to your oven as every oven is difference. Inverted the cake pan and remove cake once it is cool completely.
9. Decorate the cake and keep inside the fridge before consume.
