Stuffed Focaccia 酿料佛卡夏面包

The other day when i try to figure out what to cook for lunch. Suddenly i got this idea making Focaccia that stuffed with ham and cheese which i saw in my friend Jessie's blog long time ago.





Basically the type of filling and topping are depend on your choice, you can stuff with anything that you like. For this case, i only have Gouda cheese and luncheon meat, so stuff with them. As for topping, i don't have herbs at that time, so i topped with spring onions and yellow onions.


And i told Jessie that what filling i am doing to make next time? Stuffed with chicken curry, sound like Kampar Chicken curry bread right, must be yummy, can't wait to try out ^_^

Updated on 5th June 2015- Today i just done Stuffed Focaccia with chicken curry. Chicken curry recipe as per below, use the same amount of bread .











Stuffed Focaccia 佛卡夏面包

For the bread
350g bread flour or high protein flour
1 and 1/2tsp instant yeast (you may reduce to 1tsp)
15g Olive oil
1tsp fine salt
200g water


For the filling
100g Gouda Cheese, thinly sliced ( or your choice of cheese)
190g Luncheon meat, pan fried, or you choice of ham

For the topping
2 sprig spring onions or scallion, cut 1cm in lenth
½ yellow onion, sliced
2tbsp Olive Oil
Some Sea Salt

Method:
1.For the bread, mix all ingredients in a mixer, knead till dough smooth. Set aside to proof.
2.When the proofing is complete, divide the dough into 2 equal portion.  Oil the Pyrex dish or baking dish (I use non stick 9”x9” square pan, so I didn’t greased). Stretch out 1 dough to fit into the baking dish.
3.Arrange the cheese on top, followed by the luncheon meat.
4. Stretch out the other half of the dough, cover on top of the filling.  Let to proof in a warm place about 30mins. 
5.When it is ready, sprinkle spring onions and yellow onions on top. Dizzle with olive oil and sprinkle sea salt.
6. Bake in a pre-heated oven at 200C for 20mins (if possible, spray water on the oven wall at the side and bottom for 3times in order to get crispy crust), then 190C (fan forced) for 5mins for even browning.

Stuffed Focaccia with Chicken Curry

350g chicken meat, cubed
2 potatoes, cubed
2 sprig curry leaves
3 shallots, chopped
2 garlic, chopped
¼ onion, chopped


1tbsp curry powder
2tsp red chili powder
1/2tsp turmeric powder
3/4tsp salt
1/2tsp fish sauce
1tsp sugar
Water

Method

  1. Heat oil in a non-stick frying pan, add in potato cubes, pan fry till slightly brown.
  2. Add in chopped onion, shallot and garlic, stir to mix well and sauté a while.
  3. Add in chicken meat, stir fry till colour changed.
  4. Add in water, and all seasonings, cook till curry sauce is thicken.
