I made this Longan Pudding 2 days ago as the weather here was so hot and hazy, about 2 weeks no rain at my place. I need something to cool me down...
You know what, after i made this jelly, my place started to rain, hahaha....
The original recipe is using soy milk, but soy milk was run out stock and i was lazy to go out to get some, I replaced evaporated milk with soy milk. I like the texture of this pudding, not too soft and not too firm. But my kids and hubby still prefer the soymilk pudding with palm sugar syrup and minced ginger that i prepared earlier.
Longan Pudding/Jelly
(recipe source: adapted from The Kitchen 70's with minor changes)
1 canned Longan fruit in syrup
1tsp agar-agar powder
1tsp gelatin powder
100g sugar
700ml water
200ml evaporated milk or soy milk
100ml Longan syrup (from canned longan)
3tsp lemon juices
Method
1. Mix agar-agar powder, gelatin powder, sugar and water in a saucepan, cook over low medium heat until bubbles form around the edges of the saucepan.
2. Add in milk and Longan syrup, stir and mix well. Add in lemon juices and turn off heat, keep aside to cool for 5mins.
3. Pour the mixture into prepared jelly cups, let it cool for 30mins and firm on top.
4. Spoon canned Longans and 1-2tbsp of Longan syrup on top, refrigerate until set.
5. Serve cool.

这次,
我也有弄龙眼布丁哦!
beautiful clicks...pudding looks perfect and mouthwatering...
This looks lovely! I already looked it up and I can substitute tapioca for the agar agar flour. However, I am not having luck finding a sub for the longan. The only thing mentioned online is canned pineapple. Do you think it would taste remotely the same? Or is the longan fruit the real base of this recipe? It just looks so interesting!
Very refreshing pudding/jelly!
Barefeet in the kitchen, I think should be alright to replace canned pineapple instead of Longan, or you can replace with Lychee also good. But usually here we prefer Longan and lychee for this kind of pudding . And I feel tapioca can not replace with agar agar powder, they are two difference ingredients. Why not search it in your nearby Asian grocery store.
Very refreshing pudding, yummy.
Oh yes, the agar-agar sure looks delicious and refreshing! Especially with the longan!:D

Lovely dessert for the weather, what's more with the visiting haze. Just wondering, there is lemon juice in the list of ingredients but no mention of it in the method, so wonderinh when do we put in the lemon juice - just before serving is it? Thanks!
Attempted this smooth dessert...and like you said, it really did bring in more rain, hahah.. Thank you very much!

Hi, I'm gen. May I ask your recipe is for how many cups of pudding/ Planning to do about 30 cups for my son's birthday in 2 weeks. Is it as soft as the packet type of ready-made pudding (instant) mix we buy?
Thanks!
Hi Sonia,
I don't know why the jelly does not set even after a night in the fridge :( Not sure what went wrong...
Hi there, I forgot to buy evaporated milk but I have condensed milk. Do you think it will work? Thanks in advance!
Christina , it should be work but you have to reduce sugar since condensed milk is sweet , and you can't use same amount of condensed milk to replace evaporated milk , a lot of adjustment to be done
