Banana loaf-something special

After baked banana cake, use the balance bananas, to bake a banana loaf. At least this is something special than the normal loaf.


- you can smell little banana aroma only





- the texture is quite rough, because I did not knead it long enough. The dough was too sticky, since I use hand to knead, quite messy during kneading ......


I was referring to Jane's corner carrot hotel bread, but replaced carrot with banana.
Recipe to share:-

High protein flour 320g
Yeast 1tsp
Sugar 8g
Honey 32g
1 egg (medium size)
110g mashed banana
114g milk
16g butter

Steps:-

1.Mix all ingredients in a mixing bowl except butter, mix well till become dough
2.Add in butter and continue knead until elastic, set aside and rest for 60mins.
3.Slightly knead the dough and place into a baking tin ( due to too sticky, can’t roll up like a swill roll)
4.Bake at pre-heat oven for 25mins at 180c or until golden brown.

* do enjoy this bread with peanut butter, good combination..

    Remember to spare me 1 slice to have it with my coffeee latter on :)

  4. 我真的佩服你。。用手搓都可以做一大个面包。我昨晚用汤种法做面包。。才125克的粉都搓到我的手酸死了..哈哈哈
    我跟LG讲, 如果他要吃好吃的面包,买面包机给我。那他们就时常可嗅到面包香了。

  11. That looks like a perfect loaf of Bread Sonia.... I would never have guessed there was banana in there....except for the fragrance of it like you say.... Hmm...would be simply awesome with a little pat of butter !

    ( PS : So many banana recipes these days ) : ) .....Oh, also Thank you so much for the advice on the Dule De Leche... I am so grateful, I had no idea you had to keep the can fully submerged in the water... since I like it soft...i will definitely follow your tips ! Thank you so much Sonia.

  15. Hi all Girls, Thank you for your lovely words, this loaf is easy to make, hopefully you will try out one day.

    A full-time housefly, my oven is Microwave cum Conventional (SHARP brand), very old oven, almost 10years, but still woriking well.

    Sulianmummy, ya, is true, it is not easy to use hand to knead dough, if dry dough, still ok, but wet dough, very messy ler. My next pet will be a Kitchen Mixer...
