Ayam Masak Merah (Red Chili Chicken)

Beside Ayam Paprik, I like to eat another type of Malay style of Ayam (Chicken), Ayam Masak Merah (Red Chili Chicken), usually I will top up this chicken when I buy Nasi Lemak from Malay stall.

- Ayam Masak Merah (Red chili chicken), very hot and spicy..

- I also cooked Petai prawn to eat together with Ayam Masak Merah.

-Nasi Lemak with Ayam Masak Merah and Petai Prawn, this time my kids really can not tahan (stand) the hot of this chicken, even myself also can not tahan a little bit..hehehe..

Simple recipe to share:-

Marinate chicken (pieces) with:-
1. fresh turmeric paste or turmeric powder
2. salt
3. light soy sauce

spice paste (blend garlic, ginger, galangal and shallot)
homemade chili paste, or Chili Boh
tomato ketchup
fresh tomato, chopped finely
Onion, slices
lemongrass, smashed
coconut milk (optional)
salt and sugar to taste

steps:
1. Deep fry the marinated chicken pieces until golden brown, set aside
2. Heat oil in a wok, saute the spice paste and lemongrass until fragrant. Add chili and onion slices and saute for a while.
3. Add in the fried chicken pieces, and add water to simmer for a while. Season with salt and sugar.
4. Add in coconut milk (optional), cook for 1 min, dish out and serve.

  3. HI-5 , Sonia ! We both cooked the same dish but of a slightly different version.... yours looks very spicy , mine was mild spicy because my girl can't eat too spicy.... I never cooked petai beans before , is it nice ? I heard some people said that petai bean smell strange !

  6. I love all the food you cooked except petai. Because when I was in Taiwan, most people in the Southern Taiwan (南部)ate a lot of petai (嫔榔). I can't stand the smell.

    A fulltime housefly, petai is like durian, some ppl love it and some ppl just hate it.

    Pete, ya huh, I forgot this combination, next time I will cook tomato rice with Ayam Merah, my kid just love tomato rice.
