Chocolate rice and walnut butter cake

I got this idea to bake a chocolate rice and walnut butter cake from a Full-month package that I received from a friend. This cake is slightly crispy on the top due to added the chocolate rice, and I especially like the walnut inside.

I made it twice and each time we finished it off immediately. ! issue, why is my cake not fluffy as yours? it doesnt rise and is quite heavy. but we love it thou. and is it possible to reduce the sugar or replace it with brown sugar?
