Red Eggs 红鸡蛋

Today about egg again !!
Red egg is a must have item when Chinese family celebrating Birthday, baby's full month, wedding & etc. My son Lucas turned to perfect 10 yesterday, as usual, I prepared some red eggs and cooked Hokkian Mee Suah soup (flour vermicelli in soup) for him.

How to get this sharp and nice red on the hard-boiled eggs?

My mom taught me by using rice vinegar mix with Rose syrup (widely used by Malay to making drink) to dye red colour on hard-boiled eggs. You may replace with red food colouring if you couldn't find rose syrup. I like the rose syrup give rosy smell on the egg. Using rice vinegar is to coat the colour easily on hard-boiled eggs.

Chinese Red Eggs 红鸡蛋

1 tbsp rice vinegar
½ tbsp Rose syrup

Method
1. Mix rice vinegar and rose syrup together in a small mixing bowl.
2. Dye egg in red syrup one at a time, using chopsticks to stir and coat well the whole egg. (updated on 28 Jan 2015- please make sure dye eggs while eggs still warm).











As usual, I use my favourite tulip crystal bowl that I bought during my trip to Keukenhof Tulip garden in Holland to serve these red eggs!

  3. Oooh I learn something new today. We used to color the eggs with red coloring and vinegar. Never thought of using rose syrup for it. Great idea. My mom too will cook mee sua and 2 hard boiled eggs for us on our birthday. Is the Hokkien thing :)

    I've never thought of using the Sirap Ros to do it, actually cheaper than buying a bottle of Star brand food colouring. Further, it'll give the eggs a rosey smell. Good idea. And the eggs look so evenly coloured, so pretty.

  15. IC IC....Rose syrup! I have to do this soon Sonia, so happy that I've learn smthg from you here. May I know whether do I have to soak the egg into cold water before colouring? Coz I thought soak in cold water awhile may gv nice peeling of the shells later..;p

    Reese, I did not soak in water, just let it cool in room temp. As I know from my mom, new egg is difficult to peel the shell, old egg is easy to remove.

  41. Your red eggs look almost like stone eggs - so even and vivid the color! Nice! I've never known how to make such perfect eggs. What is the ratio of vinegar and red coloring? Do we immerse the hot egg into the color mix? Or wait until it cools down? Thank you for any tips! :)

    J.O, the result should be the same, but use rose syrup is more healthy since we use to drink them and it bring some nice rose smell. I guess their price is almost same, why not buy this and try it out.

    Kat, sorry, I did not actually record down the actual measurement as I thought everyone also know how to dye this red eggs. But next time I will record it down and share with yours. I wait till eggs cools down and just lightly coat in the color mixture till colour is even. Hope this helps!

  43. Sonia thanks for showing such a wonderful photo of the red eggs. The tulip crystal bowl is so..... so pretty. If you like the smell, add in a drop of rose essence that Malaysian used to add to our agar agar. T
    o boil eggs in the perfect way is to put a piece of kitchen towel in your rice pot and arrange the eggs on it, must sure that the pointed side onto the pot and the bigger side on top and add in some water, just a few spoons, less than 1/4 cup and cook as if you are cooking rice! When it popped up, let it stand 5-10 mins then pour water into the rice pot to cool them -- easy for peeling later. Drain and dry them, now you can start dye. Sonia, how you can make them so perfect! Mine has 1 spot on it as I have to let it stand on newspaper or, egg holder which came along with eggs, to dry
