Walnut Butter Cake 核桃奶油蛋糕

I started to feel lazy to update blog after rest for few days. But I have few recipes still pending to update as per my Instagram reader's requested. One of the recipe is this Walnut butter cake, and this cake is one of my favourite butter cake. If I could recall, my old recipe was way back in 2009.


 
After adjusted the old recipe, this new recipe just suit to my taste, the cake is not greasy, right sweetness and quite light.


Walnut Butter Cake 核桃奶油蛋糕
*makes a 6” round cake 

125g butter (salted), room temp.
80g caster sugar
2 eggs (A size)
1tsp vanilla extract

2tbsp milk
110g cake flour
1tsp baking powder
60g walnut, process in a food processor till fine 

30g walnut, for topping 

Method

  1. Line paper on the bottom of the cake pan. Sift cake flour and baking powder, set aside
  2. Cream butter, vanilla extract and sugar till fluffy and pale (take about 4mins using hand electric mixer at speed 2).
  3. Add in egg one at a time, mix well with each addition.
  4. Add in flour, walnut and milk, combine well. Sprinkle walnuts on top.
  5. Bake at a pre-heated oven at 170C for 40-45mins or 180C for 30-35mins.

  3. Hi Sonia, I have too many walnut cake recipes and I don't know which to pick. Lazy bug has attacked me too. The cake is lovely. I like walnuts in cakes especially love the crunch.

  4. Your walnut cake looks soft and moist and I am sure full of flavour too. I like to use chopped walnuts in my cakes but not walnut meal. I shall try walnut meal next time. Thanks for the brilliant idea Sonia.

  11. Your cake look exactly like the walnut cake from Angel Cake House in KL. I used to buy it from them. They were really good. I wonder if they still sell this now.

    Thanks for sharing this recipe. I tried today and it came out nice!
    One thing I want to ask is its rather crumbly. I must pick up the cake slice carefully else it will crumble n break into pieces. What could be the likely reason?

  24. Cecilia, maybe you have over baked or too much of egg, make sure you use A size egg.

    1. Thanks Sonia for reply. I used egg weighing 50g so I think the egg should be ok. It must be my oven temp then. My recent bakes been coming out not right. Will buy an oven thermometer to check. Thanks for advice!

  26. Thanks for sharing such yummy recipe. I have made 2kg of walnut in a span of 2 months ever since I tried your recipe. Perfect everytime and taste even better with the canned Golden Churn. It has become one of my favourite to-go cake now. Very modest looking but taste impressive. Love it.
