Love how it turned out, the red part of bread look quite similar like real watermelon flesh ^_^
The process of making this watermelon bread loaf not as difficult as i thought, lets see the steps..
Next time i have to increase the amount of raisin. This was the amount i put in, but it turned out so little and only able to spot 1 or 2 raisin when i cut each slice.

Next ,i am going to make yellow watermelon ^_^. This recipe is use red yeast rice powder to create red effect. If you don't have this, you can replace with red dragon fruit flesh (adjust the liquid amount accordingly) to create similar red effect.
Watermelon Bread Loaf 西瓜土司*for a 11cmx20cm (internal), non-stick Pullman tin375g bread flour35g sugar1/2tsp fine salt1tsp instant dry yeast250g fresh milk ( I use cold milk from fridge)20g unsalted butter, room temp
For red watermelon flesh2tsp red yeast rice powder1tbsp fresh milkFor green watermelon skin1tsp green tea powder1tbsp fresh milkFor dark green watermelon stripesblack charcoal powder, green tea powdersome raisinsMethod1. In a stand Mixer, add in bread flour, sugar, salt, yeast and milk, mix into dough using low speed, kneads till smooth.2. Add in butter, then knead till dough is shinny and smooth.3. Remove 190g plain dough, place in another clean bowl and set aside to proof till double.4. Remove 300g plain dough, add in red yeast rice powder and milk, knead it by hand till colour is even. Place in another clean bowl and set aside to proof till double.5. The balance plain dough (~190g), add in green tea powder and milk, knead it by hand till colour is even. Place in another clean bowl and set aside to proof till double.6. Use a rolling pin, roll red dough into rectangular shape (same length as per loaf tin), sprinkle raisins on top, then roll it like swiss roll.7. Use a rolling pin, roll plain dough into rectangular shape(same length as per loaf tin), then wrap red dough inside.8. Mix a bit of green tea powder and charcoal powder with water till a dark green paste. Use a rolling pin, roll greed dough into rectangular shape (same length as per loaf tin). Take a Chinese brush, paint with dark green paste to create watermelon stripes effect. Wait for few minutes, to let it dry. Then wrap white and red dough inside.9. Place the dough in the prepared loaf tin, set aside to rise till about 90%. Cover with the lid, continue to rise completely, take about 1hr.13. Bake in a pre-heated oven at 180C (fan forced) for 20-25mins (I took 23mins). Every oven is difference, please adjust temp and timing according to your oven. Once done, immediately remove bread from the tin and cool on wire rack before slice them.
