Apple Yogurt Cake 苹果酸奶蛋糕

When i see two small Granny Smith apples have been sitting on the countertop for quite some time. It was not enough to make a apple tart. So i made them into this apple yogurt cake since i was craving for some cake at that time ^_^.











Also wanted to try out this new brioche pan that bought it for quite some time already.


Glad that my family like this cake which is less sweet, moist and no greasy.

Apple Yogurt Cake 苹果酸奶蛋糕
*for a loaf pan or brioche pan

100g Apple, (I use Granny Smith), peeled and cut into small thin slices
2tbsp sugar

100g unsalted butter

Pinch of salt
1/4tsp vanilla extract
80g caster sugar
2 eggs (large or A size)
50g natural yogurt
150g cake flour
1tsp baking powder

Method
  1. Sift the cake flour and baking powder together.
  2. Add apple slices and sugar together in a saucepan and cook over medium heat, stir and cook till apple slightly soften and sugar is dissolved. Set aside to cool.
  3. Beat butter, sugar and salt until light and fluffy, add vanilla extract, beat to combine.
  4. Add in egg one at a time, beat to combine.
  5. Add cake flour and yogurt alternately, mix to combine.
  6. Put in the apple pieces, fold to combine
  7. Bake at a pre-heated oven at 180C for 45-50mins.

Ice Pandora , I didn't greased this time, but will do it next time ,grease with butter and flour.

Is the outcome sour? My kids love red apples but hated green ones. Do you think we can change with red apple and use yogurt drink instead of plain yogurt?

Therina, overall cake taste is not sour, unless you bite the green apple cubes but not overly sour as it has coated with sugar.

Sonia, thank you very much for sharing. Baked yesterday, the texture👍👍👍 we love it! Can I check if I can use the same recipe with fruits like strawberry, blueberries, etc.
