Baked Zucchini & Ham Frittata 烤夏南瓜及火腿蛋饼

Love this simple egg-based Italian dish, perfect to prepare for breakfast or a quick lunch. A very balance of dish which have egg, meat, cheese and vegetables.







I love this cast iron skillet !! i have well seasoned it so it is basically non-stick and can be directly bake in the oven.


Basically the main ingredients in this recipe you can change it except Egg!! you can change ham to sausages, zucchini to spinach or potato , use your preference type of cheese..

Baked Zucchini & Ham Frittata 烤夏南瓜及火腿蛋饼

4 eggs (A or large )
100g ham, sliced
1 small zucchini, shaved into ribbons using a peeler, discard the centre core
2tbsp all purpose flour
2tbsp fresh milk

1/2tsp salt
Black pepper powder
3pcs cheddar cheese, sliced thinly( I used Chesdale cheese or any other your prefer cheese)
8 cherry tomatoes, halved

Method
  1. Preheat oven to 175C.
  2. Lightly beaten eggs in a mixing bowl, add in zucchini, ham, flour, milk, ½ portion of cheese, salt and black pepper. Lightly stir till combined.
  3. Pour the mixture into a prepared pan, prefer non-stick pan (if use normal pan, line with parchment paper). I used 20cm cast iron skillet, grease and pre-heat over gas stove.
  4. Arrange tomatoes and remaining cheese on top, slightly pressing to level it.
  5. Bake for 30mins. Increase to 200C, grill (top heat only) till golden brown. Serve warm.
