Just like to share with you this simple and delicious stingray dish:-
Steps:-
1) Heat up oil and stir fry spice paste ground (garlic, ginger and small onion) until aroma.
2) Add the stingray (cut into chunks) , add litttle water, and mix well with spice paste.
3) Season to taste with salt, sugar and oyster sauce.
4) Add in spring onion and onion (cut into big slice).
5) Add few drops of " Hua Tiew " wine.
6) Dish out and garnish with red chilli slices, Serve Hot.

Nancy and Bakeling, stingray can be cook into various type of dishes. I like especially the BBQ type.

Aiyah, not my skill issue, I just use the free download software "Picasa" to enchance the photo only, also good advise from both Colin and Bakeling.

Oh, can I just ask you about your sambal :)
I tried making sambal from scratch -- tumis the dried chili for 1 hour before adding blended onion, salt and sugar.
Mine turned out looking rather dark, although I've set it at very low temperature. Taste like something is missing too. Help? > . <
cheryl,I'm not sure why your sambal turn dark, maybe not enough oil.
You must tumis with big sum of cooking oil (tumis for 1hour), after you add in blended onion, salt and sugar (put a lot also) , you also need to add some water and continue to tumis for about 30mins.

Your photos look like one of the restaurant's menu~ really professional! My boyfriend is a mixture between malaysian and european (but he has never stayed in malaysia), so he doesnt know much about "delicious food" in malaysia like stingray! I persuaded him to makan when we go back to malaysia next yr... hehehe... the good thing about him is he is not fussy, so he eats whatever he sees... =D
