Carrot Cake Brazilian style




I bought a 12 friand moulds from Melbourne ( there was 30% discount otherwise i will not buy due to high conversion ^_^) and have been searching for a recipe to try out this new mould. I saw this simple carrot cake in Tanja's blog and i immediately tried out using this new mould.

Just few ingredients and don't need a mixer to do the job, the outcome was quite impressed..similar like muffin texture, carrot taste was not strong..but beautiful golden orange colour..

I like this new mould because i can bake mini and cute cake, each of my family just grap one and enjoy!

First I use a food processor to process carrot till coarsely then only transfer to blender to blend it till finely..

I reduced the sugar from 300g to 200g but still taste a bit sweet...that's why i omitted to dust icing sugar on top of the cake..

(recipe source: adapted from Tanjas Cooking Corner with minor changes)
*makes 12 friand cakes or 26cm ring baking pan

Carrot Cake Brazilian style3 large carrots, peeled and thinly sliced (about 350g)
3 eggs (medium)
240ml corn oil
200g sugar
1/4tsp salt
250g all purpose flour
1tsp baking powder

butter (to grease baking pan)

Method
1. Preheat oven to 175c.
2. Place the sliced carrots, eggs and oil into the bender, then process untill the carrots are finely chopped. Add in sugar and salt, mix till combine.
3. Add flour and baking powder, mix until well blended.
4. Pour batter into greased baking pan, and bake for 35-40mins or until inserted skewer come out clean.
5. Remove cake from pan and let cool and enjoy!

Sonia..the baking pan is a great buy coz I dont see them around here. The indent design makes the cake cute. Your carrot cake looks moist and can imagine how good it taste from your description :)

That's a beautiful friand pan, Sonia. And I love the simplicity of this recipe. Also it's so different from all the other carrot cakes ... and you know I love different :) Bookmarking this one.

Hi Sonia, nice cake mound u have . Just to confirm This carrot cake actually do not require to shred the carrot (unlike the usual carrot cake) Right? Can I use a juicer to make this?

Sonia, what a cute mold! I love the beautiful rich orange color these carrot cakes give, and they look very moist inside too. Very healthy cakes using carrots and we can feel less guilty eating them. =P

i saw some friands mould too in queen vic market the last trip i went there but i didnt get those moulds, they look very simple and quite different from what i see you got here so i ended up never buying them.

Can I enquire how long is the baking time for this friand mould? I presumed the 35-40 mins baking time as stated refers to baking with the 26cm ring pan right?

I can feel my hand was stretching over to pick one!haha... btw without reading the text i thought they were kuih bahulu! since they were made of 350g of carrot it should be considered a healthier diet for me & my 2 kids (who are not so keen on eating VEGGIES)! I must try this recipe too!
