Deep Fried Prawns with Salted egg yolk




I took four homemade salted eggs out from the fridge after kept it for 10days to making this dish, deep fried prawns coated with salted egg yolk. This dish also can be served in Chinese New Year Re-union dinner..

What to do with the leftover salted egg white? I use it to steam with minced pork, another simple and yummy steamed egg dish..

Deep Fried Prawns with Salted egg yolk
(recipe source: by Sonia aka Nasi Lemak Lover)

350g medium or large prawn, (peeled, devine, cleaned and pat dried)
1/2tsp salt
Deep Fried Prawns with Salted egg yolk 1tsp light soy sauce
1 egg white
1tbsp cornstarch
A dash of white pepper

50g corn flour, for deep fry
4 salted duck egg yolks, steamed and mashed

1 sprig curry leaf
1 small chili, chopped
2 cloves garlic, chopped

Green vegetables for garnishing

Method
1. Mix prawns with salt, light soy sauce, egg white, cornstarch and pepper and marinate for 1hour.
2. Heat enough oil in a wok, dust marinated prawn with corn flour, deep fry over high until golden brown (less than a minute, do not overcook).
3. Pour excess oil from the wok, clean the wok, add back 2tbsp of deep frying oil over high heat. Saute chopped garlic, chili and curry leaf till fragrant.
4. Add salted egg yolk, stir constantly to prevent mixture from burning. Once the mixture bubbles, add deep fried prawns. Stir-fry briskly to coat with the sauce.
5. Place some green vegetables on a plate, arrange salted egg yolk prawns on top and serve immediately. Enjoy!

OMG!! I'm drooling all over my keyboard! I have a great weakness for salted egg yolks fried with anything and even on its own. I really need to go look for those duck eggs at the big markets and make my own salted eggs. These look absolutely fantastic, Sonia!

Your deep fried prawns with salty egg yolk has reminded me of the M'sian stir-fry crabs with salty egg yolk but hoh I haven't tried neither of the dishes b4. I know that they must be very tasty! How I wish I'm living next door to you!

Hmmm I can't quite tell how these shrip would taste like without knowing salted eggs. I wonder of I tried before. Looks delicious and hope to find the ingredients. Another yummy recipe from you!

Jes, I did not record down the recipe for the steamed egg , actually very simple by adding the leftover egg white with one more salted egg, minced meat, little water and pepper, steam for 5mins. Garnish with spring onion and garlic oil.

My Quay Lo love prawns without shells but not sure if he would like it cooked with salted eggs. I have tried this dish in a restaurant before but I didn't think they did it well. I have to try your recipe at home to give this a 2nd chance. Look good Sonia.

We just had this at the Paradise Inn two days ago. Quay Lo and I did not really like the grainy texture on the prawns but the taste was good. Yours look much more appetizing than those we had. I should make this at home and try again to see if the texture is the same.

I guess I will ask you a stupid question here but insist want to ask u also. :)

What is the difference between cornstarch and cornflour?

I have this cornflour brand Maizena and do I need to buy another cornstarch or is that cornstarch is from the cornflour which its already mixed with the water?

I did google yet the explanation too complicated for me...hmmm..need some simple explanation here...
