Korean Kimchi fried rice



My daughter is Korean drama/K-pop super supporter. And now Kimchi also become our family's favourite dish..I saw this Korean Kimchi fried rice in a Korean cookbook that i bought during my trip to Shanghai. I tried and i have served this fried rice many times as my family just love it..

Usually we serve this with a sunny side-up egg, when the runny egg yolk mixed with the fried rice, so flavourful, creamy, spicy and sour, it was so delicious!

Korean Kimchi fried rice

2cups uncooked Japanese short grain rice, cook in a rice cooker


Korean Kimchi fried rice1 onion, chopped
½ yellow pepper, cubed
1 Japanese cucumber, cubed
½ small carrot, chopped


200g chicken breast, cubed (marinate with salt and pepper) , or replaced with minced beef or pork
130g Korean Kimchi, chopped


Seasonings
Chicken stock powder
Salt
Japanese cooking wine, optional


Method
1. Heat some oil in a non-stick pan, sauté onion till aroma.
2. Add chicken, stir fry for 1-2mins.
3. Add in pepper, cucumber, carrot, mix well with chicken and sauté for a while.
4. Add in chopped Kimchi and cooked rice, stir fry to mix well
5. Add in seasonings, stir fry to mix well. Last sprinkle some Japanese cooking wine, combine well. Dish out and serve immediately with a sunny side-up egg, Enjoy!!

Initially I bought the kimchi intended to make kimchi fried rice, but later my mum used it to cook with lean meat. Now all the kimchi gone and my fried rice still haven't come out yet.. hahaha

wow, this fried rice looks really good, think must be very delicious. personally i dun like to eat kimchi, but dunno why i like it when it's used to make kimchi ramen/noodles. think this kimchi fried rice must be tasty too though i still havent got the chance to try.

Sonia, I am a Malaysian, has been staying in Korea for over 20 years.Kimchi fried rice is very common in Korea,we don't use those newly made Kimchi to cook the Kimchi fried rice, the taste will be totally different from those "old" kimchi. Normally, we chopped the kimchi,fry it with perilla oil ( can get it from the Korean supermarket,we call it 들기름),Korean red pepper paste ,this is the basic ingredients before add it the rice ,sausage or tuna...you may try it....

I remember when I was in Korea many years ago, I had trouble eating Korean food but I am getting better at it now. Still, I am not a big fan of Korean food:D I am sure this fried rice taste good to those who loves kimchi.

hehhe i was also very obsessed with korean stuff a few years ago. now not so, but i still make kimchi, in fact i have a tupperware box of it in my fridge now, so this fried rice looks perfect!

I love kimchi, I know I will surely love a bowl of this too. Kimchi makes excellent flavouring, if you love the spicy and sourish taste. I used it for frying with eggs and steaming ribs too, yummy!

Hi Sonia! How have you been? Well I know you've been cooking great stuff as usual. :-) I'm not a big fan of kimchi (you know I am not very good with spicy food), but kimchi + rice combination sounds so delicious and now you put a fried egg on it... gosh I have to try this. My husband is a big kimchi fan and he makes his own kimchi soup etc because I don't cook. LOL. Thanks for posting this! Can't wait to try and I might become a big kimchi fan after all. heheh.

Nothing taste more heavenly than melty egg yolks mixed with rice, omg. I'm craving some of your Kimchee fried rice.
