Gula Melaka Granola (Palm Sugar granola) 椰糖格兰诺拉麦片

I have been making homemade granola for breakfast, and sometime we also like to eating as snack. Usually i made it using maple syrup or honey, but this time i tried with gula melaka version, and added homemade dried coconut flakes and pineapple , so tropical feel !





Homemade granola is easy, just mix wet ingredients with dry ingredients, then bake . It is so much healthy to homemade granola as we know what we put in !!

Adding egg white made it more crisp..



My homemade dried pineapples and coconut flakes, so time consuming!! Especially for pineapples, it took like 8hrs in oven to dry ( 80C with fan forced)..next time might consider to purchase from outside, hehehe..




Beside gula melaka version, i also share here another using Maple syrup version which my kids prefer this version.


Gula Melaka Granola (Palm Sugar granola) 椰糖格兰诺拉麦片

2 cups organic rolled oats (regular or old fashioned )
1/3 cup mixed nuts,  I used almonds (whole) and walnuts (coarsely chopped)
1tbsp pumpkin seeds
1 large egg white
1/8tsp sea salt
2tbsp Extra virgin coconut oil
1/2 cup dried fruit, i used raisins, homemade dried pineapple and coconut flakes


Gula Melaka Syrup
50g Gula Melaka or palm sugar, chopped
2tbsp water

 Method
1.Preheat oven to 160C.
2.Combine the oats, nuts, and seeds in a large bowl. In another bowl, whisk the egg whites and the salt until frothy.
3. Heat chopped Gula Melaka and water till melt, whisk in gula Melaka syrup and coconut oil into egg white . Add wet ingredients to dry ingredients, and stir until the oats are evenly coated.
4.Transfer mixture to a lined baking pan and spread flat.
5.Bake for 30 minute (at middle), every 5-10mins, remove pan from oven and gently flip with a spatula or fork, moving granola from the outer edges to the center of the sheet, spead flat, do it for 4 times. Bake until golden.
6.Cool completely on pan, then transfer to a bowl and gently stir in the dried fruit. Store in an air tight container.

I usually make my own granola with honey or maple syrup. But since I love coconut so much, the replacement of gula melaka will surely taste great :)

Delia, just slice old coconut flesh thinly, then bake it in over at 80C fan forced till dry, take several hours. Otherwise sun dry it instead so save energy .

Do I need to cool down the gula Melaka syrup before adding it into egg white mixture?
