Desmond's BBQ Birthday Party

Yesterday it was Desmond's 5th Birthday.
I bake a birthday cake for him, and decorated with his favorite's hero " Spiderman".




- Happy Birthday boy




- 3 layers of Yogurt sponge cake, layer with cream cheese and blueberries jam.. Topped with cherry, kiwi and Spiderman sugar candy. Realized that fresh whipped cream is easily melt in this kind of hot weather season...





-I sure prepare red eggs for every of my kid's birthday, served using my favorite glass bowl.


Tip to prepare red eggs- I use the "Rose" syrup to colour the eggs unlike normal use red coloring. I feel syrup is better since this is a favorite drink for our Malay member and it is eatable, furthermore this syrup has a very good Rose smell.

Flower in my garden

This flower is in my garden, but I dont know the name of this flower, can anyone tell me?
A lot of my relatives and friends visited me, after they see this flower, they sure asked me to give them some for bring back home to plant it.

























- just knew that this little tiny bud from the flower can be eaten, it taste like apple, sour and sweet combination, very special taste, and it grows everyday, non stop of supply ... But I'm not sure whether or we can consume this daily....

Tagliatelle Bolognese

This is me and kid's favorite dish but not for my husband, thus, I usually will prepare it when his is not at home.. Even he doesn't like pasta much, but he bought this pack of Tagliatelle all the way from Germany...









Recipe to share

1. Stir fry ground beef over high flame in olive oil, dish out.
2. In the remaining oil, saute onion and garlic.
3. Add in fresh sliced fresh button mushrooms, diced fresh tomato and herb.
4. Pour in tomato puree and the beef.
5. Add some water, reduce the heat and simmer for 30mins (can simmer up to 1 hour if you dont mind wait).
6. Salt and pepper to taste.
7. Serve Tagliatelle ( cook according to packet instructions) topped with Bolognese sauce and grated parmesan cheese.

Take note these !!!
1) Advise you to do pre-booking for yellow stickers (get the contact no via NATIONAL ELEPHANT CONSERVATION CENTRE, KUALA GANDAH, PAHANG ) because Only the first 100 REGISTERED visitors with YELLOW stickers will be allowed to ride the elephants and bathe elephants.

Hainanese Chicken Rice

I'm sure every mum out there sure know how to prepare this delicious Hainanese Chicken Rice.


















Recipe to share

1) White-Cooked Chicken (Bai Zhan Ji)

- Put the water to boil in a large pot enough to accommodate the whole chicken (that one I bought about 2kg).
- Add some ginger and spring onion in the water.
- When water is boiling, lower chicken into the water. Once the water boil again, turn slow flame and cook for 20-25mins.
- Once done, rub the chicken with salt and sesame oil.
-Cool before cutting into serving pieces.



2) Chicken Rice
- Wash rice, add the chicken stock ( stock from white-cooked chicken) , few slices of ginger, pandan leaf and salt.
- Soak rice in electric rice cooker and turn it on after 1 hour.
-Stir with fried garlic oil just before serving.



3) Chilli sauce
- Blend fresh red chilli, garlic, ginger, lime skin(optional), chicken stock(little) and salt.
- Add lime juice and serve.


4) Garlic and Ginger sauce
- Blend garlic and ginger became paste.
- Heat sesame oil in a wok, stir fry garlic/ginger paste, tasted with light soy sauce and oyster sauce.





** New way of eating white-cooked chicken (created by my husband) , use salad to wrap chicken and add mustard...

Picnic at The Kuala Gandah Elephant Santuary Malaysia

I have heard this place from few of expats who working in my office previously, and they are just like to visit this place, but it seem my local colleagues here all did not know this place. Finally, we decided to have our 1st family picnic at this place on last Sat(Wesak Day). I strongly recommend you to bring kids to visit this interesting place. The journey from Klang took about 2 hours.



















- Before departing, get ready for our 1st picnic stuffs


















- I prepared some turkey ham sandwich, sausages and black pepper beef Spaghetti.



















-scenery along the Karak highway



















- Due to Public holiday and weekend, there are too many visitors, advise you to visit during weekday.


















- Knowing more about elephants from the staff and having fun with elephants

























































-One of the interesting activities - Elephant riding











































- There are few Pondok for visitors to rest and picnic



















-brought some banana, papaya and peanuts for the elephants


















- I saw few of the Orang Asli kids having fun in the cool river ...


















You know what, entrance fee and all activities here are just FREE OF CHARGE...
But advise you to bring some foods to feed the elephants .

Mother's Day meals on 10th May 2009

Thanks to my lovely kids, Jeslyn and Lucas prepare all these meals for me today (Mother's day), I'm so happy...

Lunch - Mee Hoon Ker ( Lead by my helper, and assisted by Lucas 9 years old). And served using the new "Rooster" bowl that I just bought from wet market today.







Afternoon tea time- Apple pan cake ( prepared by Jeslyn 12 years old), she just created this recipe by herself, and the taste was really yummy.






Dinner- Lime Leaf Chicken (prepared by Jeslyn) . She made researched on few of my food magazines and decided to cook this dish for me.
1) Rice - she is just so creative by using the Pandan leaf water to cook this rice, got little Pandan aromatic..
2) Lime leaf chicken- Chicken was a bit over fried, but the taste was just so good, tasted sweet (from honey), sour ( from lime ) and kaffir lime leaf aromatic..will share this recipe next time.
3) Cauliflower- just boil and served
She did her own arrangement on plating too.
This was really nice and yummy..I just impressed.

Yogurt sponge cake

温馨小屋 strongly recommended me to try this recipe from 星厨房. I have tried for few times, and now I also strongly recommend you to give a try. This cake is very soft, moist, not too sweet and less oily.

- cut to half and apply a layer of Blueberries jam


















- I prefer to prepare in cup type.


















- Even it collapse/shrink, but still very tasty





























Ingredients:

A) 4 medium egg yolks
10g Castor sugar

B) 4 medium egg whites
60g Castor sugar
1/4 tsp cream of Tartar

120g Natural Yogurt ( or other flavours)
60g Cake flour/Superfine flour
10g Corn flour
40g Corn oil

1) Beat egg yolks and sugar till thick and pale in color, add in yogurt and mix well, set aside.
2) Beat egg white and cream of tartar until foamy, gradually add in sugar and continue beat till fluffy and soft peaks.
3) Stir a big spoonful of egg whites mixture into the egg yolk batter and gently stir with whisk to lighten the batter.
4) Then with a spatula, scoop gradually the remaining egg whites mixture and fold well with egg yolk batter.
5) Sift cake flour and corn flour, and gradually fold into batter.
6) Last add in corn oil and fold gently into batter.
7) Bake in pre-heat oven at 160c for 25mins (cup cake), 40mins (round baking pan).


Tips ( After few attempted making sponge cake, these are my own experiences for sharing):-
1) Separate the eggs when they are cold, because the yolks do not break easily.
2) Leave egg white at room temperature before beating to get best volume.
3) Cake will collapse when turn cool, advise to turn up-side down (tricky to follow this, I have tried once, but the whole cake dropped off)
4) Use superfine flour to get fine texture, and flour must sift and slowly fold into batter.
5) Fold batter gently, don't over- or under- do it
