Thanks to the recent popular 7-link tag game, and i got to know this Kenny Roger's Corn muffins at Kitchen Flavours's blog as this muffin is her most popular post.

I'm glad that I can use the cornmeal for this recipe which already sitting in the fridge for quite some time. I replaced the frozen yellow corns with fresh corn kernels but this was not an good idea, the corn turned quite hard after baked.

Kenny Rogers' Corn Muffins




Kenny Rogers' Corn Muffins
Recipe souce: adapted from Kitchen Flavours, original from recipe.goldmine.com, with minor changes

Ingredients :
Kenny Rogers' Corn Muffins125g butter, softened
80g caster sugar
1/4 cup honey ( reduce about 1 tablespoon from the 1/4 cup)
2 eggs
1/2 teaspoon salt
200g all-purpose flour
3/4 cup yellow cornmeal
1/2 teaspoon baking powder (I changed to double action baking powder)
1/2 cup milk
3/4 cup frozen yellow corn ( I use fresh corn kernels)

Method
1. Cream together butter, sugar and salt in a mixing bowl till light and creamy.
2. Add honey and egg, combine well.
3. Add flour, cornmeal and baking powder and blend thoroughly.
4. Add milk while mixing.
5. Last add corn to the mixture and combine until corn is worked in.
6. Grease a 12 cup muffin pan and fill each cup with batter.
7. Bake at pre-heated oven at 180c for 25min.

I think I might be the weird one.
I always leave behind those corn muffins whenever I eat Kenny Rogers.

Sonia, are we able to get cornmeal here locally? Does the Cake ingredients shop sell cornmeal? I have not come across that? I would like to try to bake this corn muffin

Mel, I can't get cornmeal at the usual bakery shop too and this was given by my SIL who brought back from UK. But you can try to search in Cold storage or Jaya Grocery or Poon Huat in Singapore. Hope this help.

I baked such muffin once but the muffin turned very dry the next day. May be can put the blame on the recipe I used. :-p. I shall try your recipe else my balance cornmeal will sit in my kitchen forever. :-)

Like Wendy I am never a fan of corn muffins. I find them too dry but yours looks really moist and soft. Do you think it will be better to add cream of corn rather than corn kernels?

Gert, I am actually thinking to add cream of corn if next time I bake again but try to remove the juice as much as possible.

I always love muffins from Kenny Rogers, especially their Vanilla Muffin. I hope can try yours as soon as possible, but need to get the corn-meal ready first, are you using the coarse one or the one like powder?

Sonia, we eat corn muffin and corn bread with bean soup. Try it, it is a great combo! You muffin looks good. Mel, you can get corn meal from Village Grocers, Jaya Grocers, Ampang Store and Hock Choon. The corn meal stocks in Cold Storage is not consistent.

I've never eaten at a Kenny Rogers. Your muffins look great though. Sorry to hear that fresh corn didn't work out better, but they still turned out beautifully!

Sonia...your muffins blooms well :) you use double action baking powder? reason ? haha I will use that too if it gives the muffins such a nice bloom . Try steaming the corn first before you shack them from the cob, it will not be hard then after baking :)

Oh yummy, I'm salivating by looking at your muffins! I love Kenny Rogers chicken! Havent been visited it for such a long long time but luckily when we went back to M'sia for a month of holidays in Mar/Apr, I was able to try their chicken again!

Guess what! I've been looking for a good kenny roger's corn muffins for quite some time. And thank you for sharing this. I love kenny roger's muffun. I prefer to use cream corn than corn kennel. It tastes softer. Thanks again.

Hi would love to try out this recipe and I am thinking of serving it with some fried chicken and mash potatoes. Do you have to wait for the frozen corn to defrost or can you just mix it in directly into the batter? Thanks if you can reply. Keep up the good work!
