Long Bean Pork Rice

Almost every Chinese family also know how to cook this long bean rice especially Hokkian people like me, I like to cook this one dish meal during weekend, quick,easy and tasty !

-Rice toss well with all ingredients and seasonings, before add water in rice cooker..

Long Bean Pork Rice(printable recipe)

Ingredients
450g Pork belly (cut into bite size, marinate with 1tsp of salt)
50g dried shrimp (soaked, lightly chopped)
350g Long bean (cut into 2” in length)
100g shallots (slice)
5 cloves garlic (chopped)
4 cups Thai Fragrant rice (washed and drained)
750ml water

Seasoning
1tbsp light soy sauce
1tbsp dark soy sauce
A dash of white pepper powder
Salt to taste

1. Heat some oil in a wok, saute shallot until crispy and golden brown, set aside.
2. Use the remaining oil, add in pork belly, sauté till slightly brown.
3. Add dried shrimp, stir fry till fragrant, then add chopped garlic and long bean, mix well.
4. Add in rice and toss well, add in the seasonings.
5. Remove the long bean rice and transfer to a rice cooker.
6. Add water and cook the rice.
7. Garnish cooked long bean rice with fried shallots, serve hot.

My mom cooked this so often when we were young especially on her busy day. Sometimes she will put yam in it too. It has been a while since I eat this. I have to see if I can get some long beans from the Asian store.

Yes Sonia, I'm a Hokkien too and grandma always cook this when we make Bak Kut Teh at home but she add in less pork since there is Bak Kut Teh. So yummy!!! I can eat this just by itself!

I miss long bean fried rice so much. My mom (who is Hokkien, btw) used to cook this for me all the time as a kid. :)

Yum yum! This is the favourite rice in my family. Always cook more so I can take again the next day,...it even tastier the next day..;p I used to marinated the pork with soy sauce and pepper...hee hee!

I used to tapao long bean rice when I was living out on my own during my university day. The hawker cooks it with chilli though, which I love. Haven't had this in ages

Definitely a Hokkien dish as I grew up eating this :) Besides long bean rice, my mom used to cook cabbage rice, pumpkin rice and mustard green rice. I love all of them except mustard green.

ahh.. haven't seen this for long long time.. I used to really like this when I was little!! didn't realise it was a hokkien dish.. haha... I'm a hokkien myself.. now I know why my grandma cook it so often at home :p
