Fresh Fig and Cranberries Butter Cake 无花果蔓越莓牛油蛋糕


Recently i found another pasar pagi (morning wet market) nearby for my daily marketing. This market have more stalls and more things to buy. I have never seen fresh figs 无花果 selling in this kind of pasar pagi before. I was so happy when i stumbled upon fresh figs selling in one of the fruits stall the other day. The owner of the shop told me that I was lucky enough to get these figs as this is the first time and also the last time for him to sell these figs as there are not many people seem to "appreciate" these fruit, hahaha..he even discounted few ringgits for me..so I bought 4 for RM 8 only..
Aiyah, i should have thrown some of the seeds in my backyard to see whether it grow or not..but i was totally forgotten!

The taste of fresh fig is a bit plain but i realized that after baked, it became so flavourful ! taste nicer than fresh one.

I also added some frozen cranberries which I have kept for almost a year, bought it last Christmas but did not make use of it till now..Adding cranberries was kind of balance out the sweetness from the butter cake, good choice!

My husband who doesn't fancy on any cakes, also gave thumbs up to this cake!

At first, i was planning to make the fig cake in Jane's corner, but i was too lazy to separate eggs (she only use egg white) and also no oranges, last i changed the recipe to my favourite butter cake base..

Fresh Fig and Cranberries Butter Cake

*makes one loaf

125g unsalted butter
IMG_7418 copy 100g sugar
A pinch of salt
2 large eggs
125g self-raising flour
3tbsp milk
50g frozen fresh cranberries, thawed
Toppings
1tsp light brown sugar
2 fresh fig, tips removed, sliced

Method
1. Pre-heated oven at 180C.
2. Beat butter and sugar till pale and creamy.
3. Add salt, then add egg one at a time, beat well.
4. Add in flour and milk alternatively, combine well.
5. Fold in cranberries, arrange fig on top, and sprinkle brown sugar.
6. Bake for 45 minutes, or until cake is golden and a toothpick inserted into the center comes out clean.

The cake looks so moist and soft in texture! It must be real delicious and yummy! We can always buy fresh berries and put it in the freezer and can use it anytime we want; hee...even till a year later! Isn't it fantastic? You are so lucky to stumbled upon the fresh figs! Wish I am lucky too.

Sonia your cake looks so pretty! We love figs..I specially like the many seeds giving the fruit a nice texture. Fig tree is a beautiful tree with very pretty leaf shape. I hope your seeds will sprout :)

The figs look so gorgeous on the cake! The cranberries really add to it as well. I really love how it looks.

You found fresh figs, like strike lottery like that! Never seen fresh ones before. Maybe I can just leave out figs and put dried cranberries.

Tasted fresh figs when I was in California long time back. It's actually quite plain but still yummy with it's special texture. Great idea to bake it in a butter cake, love the color of the cake, very inviting!

I never eaten fresh ones before thus last season, I bought some and it was so plain. Now that you mentioned after baking is nice. I will give this another go.

Really unfair, really unfair, what unfair. Australia produces fresh figs but also can't get this cheap. Right now, 1 fig is selling for aud$3-$4(x3 into RM), not fair to us, I want to protest, hahaha!

I love the colour of your butter cake, aiyoh, cranberries + figs, I must try next time when the price of figs are getting cheaper. Figs have a natural not so sweet taste when you eat them freshly & I actually like it! You know what, I never bake butter cake b4 though I love butter cake, hahaha, thanks for sharing the recipe with me. Remember I made the Raspberries + Figs almond cake b4, that cake only used egg whites but I love the decoration of the cake so much, must use it again for my 1st butter cake later!

Oh my ~ Sonia, how cool is that! I know you can find tons of funny stuffs at KL morning & night market but have never thought of fresh figs also available there as well. I might as well go to check at my local night market if there's fresh figs available there too. I don't think they'll have it in such small town. :0(

I always like the look of figs on desserts. I planted the same type of fig tree and so far there are only 3 fruits in it. I just pluck one but it is not as sweet as I wanted it to be :( Hopefully the other 2 will be sweet.

I love figs ..especially the one we plant in the hospital garden. The tree produces the best fig ...very sweet. I don't have to eat, by looking at the ingredients I know it's really yummy.

Such a pretty looking loaf of cake...love the bright red colors from the fruits....$2 for a small fig. I guess reasonable since it's flown all the way in huh..I'll stick to the dried ones though hehe!

Sonia, nice cake! we have figs selling in the supermarket, but I've never bought one, becoz it's pricy and it's sold in a big tray. Although u live in Msia, u have tried almost everything grown in oversea! :)

Hody, blackberry also can freeze..wash and clean the blackberries first then place on a big tray, put into freezer until turned hard. Then transfer frozen blackberries into a plastic bag or ziplock plastic bag. Hope this helps.

you know, i also have 3 figs in my fridge now, am just going to eat them first, see how they taste like maybe tmrw, scared they will turn bad fast. You got it cheaper , i got 3 for RM10.

Yay! You found the cranberries and used them in a cake too. Were they hard to find? I'd love to try the cake. I've never tasted one or cooked anything with figs.

You just made me realized one thing: I know why I didn't like figs growing up because my mom (who wasn't a baker) only served me fresh figs and the reason I started to eat and love figs is I fell in love with baked goods with figs! I didn't realize that. And now with your post, the figs will get really popular around your area and may hard to find... LOL. What a wonderful recipe Sonia! I must save this for myself!

Can I replace cranberries and fresh fig with other fruits? Like mulberries and fresh plum or nectarines?
