Homemade durian pancakes

After tasted the durian pancake at Dragon One, we all fall in love with this pancake. It look not that difficult to prepare at home. The important point is how to get a thin and good crepe!! I seached around in Google, and found out a lot of peoples have been looking for this recipe, but either one not sharing this or sharing with difference way of durian pancake !! (if you found this recipe, let me know please)

No choice, I need to make my own crepe recipe, I tried about for 4 times, mix and match, finally I got this recipe which is quite close to the original one (need to improve on the thickness, mine a bit thick).

Homemade durian pancake

To prepare crepe:-

All purpose flour 200g

Tapioca flour 1tsp

water 400ml

salt 1/4tsp

sugar 1tbsp


a drop of yellow colouring

Batter :-
1. Mix all ingredients in a big bowl and use whisk to mix well. Sieve, then cover and stand for 30 minutes.
2. Pour a scoop of the batter in the center of the non-stick pan (do not add oil) and move the pan around for the batter to coat the side.
3. Once the colour changed and batter turn hard, crepe is ready and remove it immediately . Just fry for one side only.

To prepare durian pancake:-

Fresh whipped cream
Durian flesh (if you don't take durian, you may replace it with mango)

1. Spoon 1tbsp of durian flesh and 1tbsp of fresh whipped cream on the center of crepe.
2. Fold into a square shape.
3. Immediately store in the fridge for later consume.


**Even this recipe is not perfect yet, but I'm happy as my family members love this and really cheap if make this at home. Maybe I can consider to take order, hehehe, just joking !!!

Must go to beach !! Bagang Lalang beach /Tg.Sepat

My kids keep requesting me to bring them to beach, at first, thinking to book a hotel room in Port Dickson, but all good hotels had been fully booked till end of the year. But kids saying they must go to beach, no choice I bring them to the nearest beach i.e Bagang Lalang beach and Tanjung Sepat for a half day short trip after I saw Cooking Momster's post.

-we stopped by this famous pau stall called Hai Yew Heng to pack their famous "Mui Choy Pau-(preserved vegetables) ".

-we also stopped by the nearby "Sepang Goldcoast" showroom to "kepoh" a bit. This is not Australia Goldcoast but Malaysia Goldcoast !!

-If you have million, you may consider to buy a The Golden palm tree water Villa here, but for me, I only can see but no money to buy, hahaha!!! It seem a lot of foreigner placed booking here.

-And we had our late lunch (about 3.30pm) at a seafood restaurant at Tanjung Sepat. We find the food here are just normal, but they have a very nice Sea view.

"Oleh Bread" - Encore!!

I like this super soft texture of "Oleh bread", bake and bake it again, kids also keep requesting for it.

This time, I baked a "Heart" shape.

Hokkian style of Fried Tapioca Noodles-Encore !!

I have so long did not cook this noodle since the last one " Fried Tapioca noodle and my son " on Mar, I remembered someone asked me on how to prepare the tapioca noodles, so this time I record all the ingredients and share with you.

To prepare tapioca noodle:-

tapioca flour-500g
Hot boiling water-300ml

1. If you have a mixer at home, mix the flour and hot water and use "Pulse" function to mix till well combine. Then use hand to knead till become a smooth dough.

2. If you don't have a mixer at home, suggest you to use a spatula/spoon to mix the flour and hot water (be careful of the hot water!!!) . Once it well combine, then only use hand to knead till a smooth dough.

3. Lightly flour the dough, with a rolling pin, roll out the dough into few rectangular shapes as per below. Then cut into small and thin strips.





4. Cook the noodle in boiling water, once you see the noodle float on the top, that mean the noodle is cooked.



5. Place cooked tapioca noodles in clean water, drain out when ready to use.



To stir fry tapioca noodles:-


minced meat 300g (pork or chicken, I prefer pork)

minced prawn 120g

dried prawn 50g (soak and slightly chopped)

bean sprouts 400g ( my daughter like this, so I add more !!)

shallots 10pcs ( thinly slice)

garlic 2pcs (chopped)

Seasoning:

light soy sauce 1tbsp

salt 1tsp

dash of pepper

dark soy sauce 1/2 tbsp


water 600ml

spring onion (chopped-for ganishing)


1. Heat oil in a wok, fry shallot till crispy and brown, set aside.

2. Use the remaining oil, add in garlic, then add meat and prawn, stir fry well.

3. Add in water and bring to boil.

4. Mix in the cooked tapioca noodles and bean sprouts, stir well and cook for 1-2mins.

5. Season with light soy sauce, salt, pepper and dark soy sauce.

6. Garnishing with fried shallots and chopped spring onion, serve hot !!



Few ways to enjoy Hokkian style of tapioca noodles:-

- add chili padi (my style !!)

- add vinegar (my hubby style !!)

- add tomato ketchup (my kids style !!)

Inspired by a girl who loves to bake !! Fondant cup cakes

I got this inspiration from "The Journal of a girl who loves to cook" (I think she should have changed to a girl who loves to bake !!), immediately I bake this cup cakes today. I spent the whole morning to do my 1st sugar paste/fondant cup cakes, I'm so satisfied with the result, so I can't wait to share with your.

I will think twice if I will do this again, really not an easy job (my daughter did few of the bears and also the Christmas hat), this is something like doing art works, must have 2 P (patient and passion). Thus I will suggest you to buy this kind of cup cakes from "Delectable" or any other bakery shops.

I was adapted sugar paste/fondant recipe from "Twister" , but this sugar paste will turn very dry once it expose to air. Anyway, Thank you very much to "Twister" for your kind sharing.

Sugar paste recipe ( Please refer to Twister's blog for detail steps):-

water 60g

gelatin 1tbsp

liquid glucose 1tbsp

Icing sugar 500g

Corn flour 20g

1. Mix water and gelatin on a bowl, and place the bowl over a pan with water and heat up the pan.
2. Once gelatine dissolves, add in the liquid glucose and mix well, remove from the heat and set aside to cool.
3. Add gelatine mixture into Icing sugar and corn flour, knead till smooth dough.
4. Wrap with cling film and place in a airtight container until ready to use (prefer to store 24hours before use)

As for the cup cake, I use "fluffy chocolate cake" recipe.

Okra (Lady's finger) and sambal belacan

Okra (Lady's finger) is my favourite veggie, and I like to prepare in this simple way:-

Simple recipe to share:-

1. Blanch okra in boiling water for 1min, drain and serve.
2. Serve with sambal belacan- pound red chillies, bird's eye chillies, garlic, ginger, freshly squeezed lime juices, belacan(dried shrimp paste) , sugar and salt)

Fluffy chocolate cake

The recipe I got read as moist chocolate cake, after I tried, found it was not really moist but instead quite fluffy. I feel this cake is very suitable for cup cake, next time I will try to bake some.

Cake ingredients:-
A.
Milk 250g
cocoa powder 45g
vanilla essence 1/2tsp
instant coffee powder 1/2tsp + 1/4tsp

B.
Butter 135g
sugar 255g ( yes, you need to add so much of sugar !!)
Eggs 2

C.
Cake flour 145g
Baking soda 1/2tsp +1/4tsp
Baking powder 1tsp + 1/2 tsp

To prepare cake:-
1. In a bowl, combine (A), mix well and set aside
2. Cream butter and sugar until light and fluffy.
3. Add eggs one at a time, beat till combine.
4. Add (C) mixture alternately with the (A) liquid mixture, beat until smooth.
5. Pour batter in baking pan, bake at pre-heat oven for 40mins at 180c.

Chocolate ganache ingredients:-

Sweet cooking chocolate 150g
whipping cream 4tbsp
butter 1tbsp
corn flour 1tsp
all purpose flour 2tbsp

To prepare chocolate ganache:-

1. Cook chocolate and cream over medium heat, whisking continously until smooth.
2. Add butter, stir to combine.
3. Last in corn flour and flour, stir till smooth.

Super soft bread, 欧蕾面包 !!

I saw HSling keep doing this bread which she followed to Canary's recipe, both of them highly recommended this bread because this bread is super soft. I tried, and I totally agreed with them, the bread texture is super super soft, my kids love this bread so much. The best thing is this bread is without any egg yolk added and also not adding any chemical substances e.g shortening to maintain the softness.
I do not know the English name of this bread, the Chinese name is 欧蕾面包..Can I call as "Oleh bread", sound ok?

Thanks to Hsling and Canary (she is currently stop updating her blog, I hope she will be back soon) for sharing this lovely bread.


Ingredients:-

A)
High protein flour 300g
Caster sugar 36g
salt 1/4tsp
milk powder 18g

B)
Cold water 180g (I use ice cubes + drinking water)
Egg white 24g

C)
Yeast 1tsp

D)
Butter 48g

Steps:-
1. Mix A, then add in B, combine well.
2. Add in C, continue knead.
3. Then add in D, knead till elastic. (The dough is quite sticky, don't tend to add more flour !!)
4. Rest for 60mins.
5. Slightly knead the dough again and rest for another 30mins.
6. Shape the dough and add in filling as per your preference.
7. Bake at pre-heat oven at 180c for 25mins.

**For this filling, I use Blueberries jam.
