4321 Fragrant Garlic Belly Pork

After bought a kg of pork belly, thinking to cook steamed glutinous rice, but I changed my mind after see this dish in Ohbin's house, it made me drooling by just look at the picture. So here is Ohbin's 4321 Fragrant Garlic Belly Pork, you must try this, it is super yummy!!

My tip- I slightly changed the steps of preparing this dish, as I remembered my mum taught me to make caramel when cooking pork dish as this process will make the pork dish more fragrant..

4321 Fragrant Garlic Belly Pork

Pork belly 1kg (sliced medium size) –I forgot to weight, just estimated this weight, you adjust accordingly

4 tbsp light soy sauce
3 tbsp sugar
2 tbsp vinegar
1 tbsp Chinese rice wine
Water
Garlic (chopped finely)

1. Place sugar in a heavy-bottomed pan and cook over low flame. Stir it from time to time until sugar melts and turns golden brown (do not overcook, as it will taste bitter)
2. Add in pork meat, mix well.
3. Then add in water, vinegar and wine and cook over low flame for 40mins or more.
4. Once you see little water left, add in chopped garlic, turn to medium flame, and cook till sauce became thicken.
5. Dish out (leave the excess oil).

Milk tea muffin and Thanks to Jane !!

On the Christmas eve day, i was surprised to receive a parcel from Pos Laju, inside was some gifts given by Jane. She brought these gifts all the way from Australia. Earlier she requested me to give my house address to her as she would like to send me some recipe books (she said these recipes are free), but she is so nice to also included some nice paper cup cakes and Cake-doilies for me. I just like to say BIG Thank you to Jane !!

-So I quickly use this lovely paper cup cakes to bake new recipe- milk tea muffins.

Recipe adapted from 幸福の我们 (YiYimummy) ,original recipe by 孟老师的《100道小蛋糕》.

Milk Tea Muffins (makes 12)

Tea bag 4 (I use Lipton brand)
Egg 2
Sugar 120g
Cake flour 200g
Milk 50g
Baking soda 2tsp
Corn oil 100g

1. Remove tea leaves from the bag, mix it with milk, soak for 10mins.
2. Whisk egg with sugar till fluffy, then mix in corn oil.
3. Add in milk tea (together with tea leaves), mix it well
4. Sift cake flour and soda in egg mixture, combine well.
5. Fill batter in paper cups, bake at pre-heat oven at 180c for 25mins.

** I feel this muffin turned quite dry when I keep it overnight, so try to consume in the same day.

Fried stuffed chicken wings, simply yummy !!

We love this fried stuffed chicken wings which served at Baby seafood restaurant. I imitated this at home recently..

Fried stuffed chicken wings

4 C recipe:-

Chicken wings (debone)
Chicken ham (cut lengthwise)
Carrot (cut lengthwise)
Coriander (cut lenthwise)

1. roll the chicken ham, carrot and coriander, and stuff it inside the chicken wing.
2. tie up by toothpick, season with light soy sauce,salt and pepper, set aside for 1hour.
3. coat with rice flour and deep fry in hot oil till golden brown

Macarons !!

I couldn't believe I finally managed to make this, super sweet macarons !! Actuall this time was my 2nd time making macarons (Don't mention the 1st time, failed one) and the final result was so good. This is because I adapted to a good recipe from 温馨小屋.

Recipe adapted from 温馨小屋 , Thank you very much to Felvinc for your kind sharing !!

Chocolate macarons
A)
Almond flour 25g
Cocoa powder 5g
Icing sugar 38g

B)
Egg white 23g
Icing sugar 23g

1. If you have a food processor, mix in almond four, cocoa powder and icing sugar, and give few "Pulse" to mix it well. Then sift the mixture.
2. If you don't have a food processor, just sift the flour mixture.
3. Beat egg white to a foam , then gradually add in sugar until you get a glossy meringue(like cream).
4. Fold in flour mixture and combine well.
5. Fill in the batter in a piping bag and pipe small rounds on a parchment paper.
6. Set aside to rest for 15mins.

How to bake :-

I have a microwave cum conventional oven, thus I followed to Felvinc's method :-

1. Place macarons on a wooden board, bake at pre-heat oven at 130c for 3mins, this process is to harden the shell only.
2. Remove wooden board, transfer macarons to another baking pan, bake at pre-heat oven at 130c for 12-15mins.
3. Spray some water on the paper, to easily remove the macarons (do it when macarons still warm)
4. Store in air tight container to prevent macarons turned soggy.

If you have other type of oven, maybe you can follow another Felvinc's way, see here or you adjust according to your type of oven...

Baby Seafood Restaurant, Batu Belah Klang

This is one of my family's favourite restaurant, Baby Seafood restaurant, Batu Belah Klang (I just wonder why their restaurant name called as"Baby"?), and just 5mins away from my house. This restaurant very famous among locals. They serve very good Thai & Chinese food at very reasonable price.


-no fancy menu provided, you just look up at this big white board, and order the dishes !!

-Everyone come here sure will order this signature dish, Thai style of steamed fish !! I love this dish very much, sour, sweet and spiciness (comes from dried chilies,birds' eye chillies, lemongrass, sour plum, salted vegetables , pickled garlic, ginger galangal and lime leaves). While I writing this, also salivating, hahaha!! Furthermore, this is served in a special charcoal steamer.

-They will serve you extra broth, time to time you need to refill the broth as the broth will dry up pretty fast in charcoal steamer.

-This Thai style of fried rice is a must order dish whenever we visit this restaurant. Mix the fried rice with sambal belacan, adoi, Heaven !!

-A very ordinary restaurant, but very crowded especially weekend, suggest you to visit during weekdays.

** we also ordered a plate of mix veggie (forgot to take picture), all above dishes and plus drinks, only cost me RM 66.60 (~USD 20), how to find a super cheap and nice restaurant nowadays. If you happen to be around this area, don't miss to visit this restaurant !!

Durian Ice Cream

After making the durian pancake , i use the balance durian to make this durian ice cream. If you are a durian lover, you will fall in love with this yummy durian ice cream.

**this version of ice cream is very simple to prepare, and is eggless !! this is important...

Durian Ice-cream

Durian flesh 350g
Sugar 4tbsp ** adjust accordingly !!
Fresh Milk 100ml
Fresh whipped cream 70g


1. Blend durian flesh, sugar and milk in a blender till smooth.
2. Add in fresh whipped cream and mix well.
3. Pour into a container and freeze overnight or until set.

Sweet and Sour Chicken 甜酸鸡

I like to cook chicken dishes, one of it is - Sweet and Sour Chicken, simple and simply delicious !!

Sweet and Sour Chicken 甜酸鸡

Chicken meat 500g (cut into cubes)
Fresh tomato 1 (cut into cubes)
Cucumber 1 (cut into cubes)

Young ginger 3 slices
Garlic 2 (chopped)

Seasoning:-
Tomato ketchup 4tbsp
Chili sauce 1tbsp
Sour plum sauce 1tbsp
Sugar 1tsp or to taste
Salt ½ tsp or to taste

Steps:-
1. Marinate chicken meat with-light soy sauce, pepper, salt, sesame oil, tapioca flour, little water (to moist the chicken) and egg for 1 hour.
2. Coat with rice flour, and fry in hot oil till golden brown, set aside.
3. Heat oil in a wok, stir fry ginger slices and garlic, add some water.
4. Add in the seasoning, and follow by fried chicken cubes.
5. Cook till sauce became thick, dish out and serve hot.

**even not adding any seasoning, just eat the fried chicken, also very tasty !!

Sweet Sweet Ring 甜甜圈

"Sweet Sweet Ring" is actually a direct translation from Mandarin, this is similar to Doughnut and very common and easily found in wet market/supermarket here !! Due to the high demand (my kids keep requesting for it) , in order to fulfill the demand, I have been searching around for a good recipe and a donut cutter (I only use it once for Yam ring with assorted vegetables) . Finally I found a really good recipe and here was my supply of "sweet sweet ring" :-

Recipe adapted from FoodHouse8, if you know Mandarin, this video is self explanatory, otherwise check below recipe:-
Sweet Sweet Round ( Doughnut )

Makes about 12pcs !
A)
High Protein Flour 412g
Water 247ml
Instant dry yeast 10g (about 2tsp)

B)
High Protein Flour 103g
Egg 41g (about 1-2 eggs)
Sugar 62g
Salt 10g
Milk powder 15g
Butter 62g
Water 26g

Steps:-
1. Mix (A) ingredients and knead till smooth dough, set aside and rest for 1hour or double in size.
2. Mix (B) ingredients with dough (A), knead till elastic.
3. Weight dough 60g each and shape it into a ball, set aside and rest for 10mins.
4. Made a hole in the middle of the dough, and shape it like a donut shape (don’t need to use donut cutter, also you can check out the video to have better understanding).
5. Fry in hot oil until golden brown, once done, immediately coat with sugar.

Try this out, this is really good, soft and sweet. Next time I can use the same recipe to do the similar donut like those selling in Big Apple Donuts & coffee with difference flavours.

Bukit Bintang, Kuala Lumpur

These are activities during our stay in Bukit Bintang, Kuala Lumpur to usher New Year 2010.

-Lot 10 Hutong (十号胡同), new food outlet in Lot 10 which just launched in Nov09,bringing together the golden oldies of Malaysian eateries that have survived the 2nd and 3rd generations,all in one “heritage gourmet village” .

-The famous "Bah Kut Teh" from Klang, my husband ordered this, can you imagine he all the way from Klang but did not try other foods, but took this Bah Kut Teh which is double the price than Klang ,hahaha..

- Due to I waited too long for this plate yummy of "Fried Oyster Omelet", so I missed to take picture for food that ordered by my kids..

Twin Towers, Kuala Lumpur and Fireworks 2010 !!

Good to be back in New Year 2010, I am sure you all have a wonderful celebration of this New Year !!
This time, my celebration was a bit difference, I purposely booked a hotel room in Kuala Lumpur (45mins away from my house), and to have count down and usher New Year 2010 at Twin Towers, Kuala Lumpur.
Good weather and good spot (the famous spot of best viewing of Twin Towers KL), here I would like to share with you some photos I took on 1st Jan 2010 !!
