My Malay friend taught me this simple sweet garlic chilli dipping sauce to go with anchovies fritters. This chilli sauce is suitable for dipping the savoury snacks, fried spring rolls, steamed savoury cakes, sausages or etc.
Homemade sweet garlic chilli dipping sauce
200g fresh red chilli
8 cloves garlic, chopped finely
700ml water
4tbsp sugar or taste
1 1/2tsp salt or taste
1-2pc dried tamarind peel (asam keeping)
Method
1. Wash red chilli, trim and cut in half, scrape out the seeds (if you like the sauce hot, leave the seeds in). Blend chilli in a blender till fine with some water (from 700ml water).
2. Mix chilli with chopped garlic, water, and tamarind peel, also add in seasonings sugar and salt, simmer for about 30-45mins till sauce became thicken. Stir it from time to time, and adjust the taste accordingly.
3. Pour into clean container once cool, store in fridge before serve.

The canteen at my 1st school also made their chilli sauce in a similar way, but with dried chillies. And they add in toasted sesame seeds for fragrance. But then, I think they use more sugar than you did, plus some vinegar too cos it was needed to thicken the chilli sauce for the keropok lekor.
Some more, they told me, if dried chilli is used, must simmer for 2 hours, if not will cause tummy ache.
Your usage of fresh chilli here will be my option if I want to make some, 2 hours of simmering is just too long!!!
