Hokkian Mee

Hokkian people like me must know how to cook this Hokkian style of noodle, this style of noodle must use yellow noodles ( i found a stall selling this yellow noodles which contain less alkaline water) , lard (usually I omit this ) and dark soy sauce ( for colouring purposes)..




-see how dirty is the Desmond's face, hahaha..




Simple recipe to share :-

1kg Yellow noodle
300g Chai Hsin (Asian Mustard green veggie)
1 Fish cake (cut into slices)
200g fresh shrimps
200g meat , sliced 
6 shallots, sliced
3 garlic, chopped
water (adjust accordingly)

Seasoning
1 and 1/2 tbsp light soy sauce
1tbsp oyster dauce
1 tbsp dark caramel soy sauce  (but not dark soy sauce)
1tsp sugar
a dash of pepper
salt to taste
Steps:-

1. Saute shallot till golden brown, dish out some and remain some and add in garlic fry till aroma, add in prawn, fish cake and pork and stir fry for a while.

2. Add water and cook till water boiled.

3. Then add in yellow noodle and green mustard, add in seasoning, cook for 2-3 mins.

4. Garnish with fried shallot and serve hot.


** I invented a new way of enjoying this Hokkian mee, add Tabasco chili sauce, surprisingly yummy, you may want to try it next time you cook this noodle.

Bakeling, so must put a lot of ingredients during photo shoting (actually I add a lot of ingredients too) , make your drooling lor..

Anncoo, this is my husband super favorite noodle too.

Palidor, ya, have to carefully eat this noodle.

Nancy, cook at home, we can put as many of ingredients we like, and fesh one too.

Shandy, if you could not find yellow noodle, you can just replace with any noodle which you can easily find.

Im not hokkien people but i like hokkien noodle... i like those really fat noodle + deep fried pork fats!... the hokkien noodle over here is very different, thin and tasteless... aww... i miss hokkien mee so much!

Hi hi ... I really like to try cooking this dish when my guests come on Christmas day. Is it okay for you to let me (other young cooks as well) know how much is needed for the seasonings? I mean, how many tsp or tbsp needed for light soy sauce, dark soy sauce, pepper and salt? Thanks much!
