Butter cookies 牛油曲奇-simply buttery and melt-in-mouth !

Testing ! Testing ! I saw a lot of bloggers did this easy to make butter cookie, I gave it a try. Wor, this cookie simply taste buttery and melt-in-mouth. So I officially listed this cookie in my CNY cookie list. If Kuih Bangkit is too difficult for you, I suggest you to try this, very easy to do.

Recipe adapted from 阿莫 , Thanks Ah Mor for kind sharing.

Butter Cookie (makes 50pcs)

Butter 200g (use good quality of butter)
Icing sugar 50g
All purpose flour 150g
Corn flour 50g
Chocolate chips (optional, not in original recipe)

1. Beat butter and icing sugar till creamy.
2. Sift in flour and corn flour, mix well to a soft dough
3. Scoop dough into piping bag and pipe dough evenly on baking tray.
4. Bake at preheated oven at 180C for 13-15 minutes or golden brown.

Sonia, scary!!!!! I did the exact same thing today, different recipe but same piping. I didn't have cherry bits and use the exact same chocolate chips at the centre of my butter cookies too! I'll try to get that post up as soon as possible for you to see to believe it!!!! Great minds do think alike!!!!!

Hey, it looks nicer with a choc chip topping. With a little dressing up, the cookies look prettier on photos. Yea, its really a nice and easy to make cookies. Those who havent try - quick go try it out. ;)

I just tried this recipe. Really very nice. But I cannot pipe as nice as yours. Did u pipe double layer? Mine is very thin.
A lot of hard washing to do becoz of butter.

Hi Teo, you have to pipe it out but not roll them .. Fill the dough into piping bag that filled with large tip.

Thank you for the recipe. I have tried it and the cookies are very yummy...and they melted in the mouth! However, my cookies didn't hold their shape after baking...they flattened out. Did I overbeat the butter? Appreciate your advice!

Florence, try to bake at the lower rack and low temp 150-160 C. The temperature mentioned in my recipe was referring to my old convention cum microwave oven..it might not suite to the normal oven..

Thank u for your reply. Earlier, Without waiting for your reply, I tried with unsalted butter. The cookies were melt-in-the-mouth good. Will try it with salted butter to taste the difference.

Hi Sonia, thanks for this easy recipe. I baked it last night and tonight. Love the melt in the mouth texture but tonight's batch was much fragile as it crushes if I am not gentle in holding the cookie. Do you know what is the reason? Does tenperature play a part as I lowered the temperature from 180 to 170 tonight.

I used your recipe today but it turns out very bad, all piping shapes spread till flat and even I lowered the temp and baked at lower rack for the 2nd batch it still spread...is it because I used cake flour?? Or the hot weather does play a part??
