I like pandan (screwpine) butter cake, but I don't like to add store bought pandan paste as they are too fragrant and artificial. Until I found that we can make pandan paste at home, i immediate bookmarked this recipe but just have time to try out last week. I like the natural green from the pandan paste and the cake smell so good.
I left the pandan juice (blend 25pcs of pandan + 300ml water) in the fridge for 5 days, you can see a layer of pandan paste sink at the bottom. You may check more details in Wendy's blog.
Pandan Butter Cake
250g butter
160g sugar
4 eggs
250g cake flour
2tsp of double action baking powder
6tbsp homemade pandan paste (concentrated pandan juice)
1. Sift cake flour and baking powder in a bowl, set aside
2. Beat butter and sugar until pale and fluffy.
3. Add in egg one at a time, mixing well.
4. Fold in flour and pandan paste, combine well.
5. Pour cake mixture into cake tin.
7. Bake in pre-heated oven at 180C for 60mins or skewer came out clean.

You finally tried out making concentrated pandan juice. The fragrance and colour is really good right? But takes a lot of patience and waiting time, cannot say I want to eat pandan cake today and then can make oredi, hehehe. Must wait.......
Eh, I tried Aunty Yochana's recipe for Pandan Butter Cake, she uses coconut milk in it, and it was very good. Maybe you can try that next time.

Sonia, your pandan juice actually turns out so pretty and green. When I use natural pandan juice, the colour is actually very light but maybe I did not extract it long enough...

Mmmm...the cake looks so delicious! Wish I could taste one right now. Guess I gotta make it soon. :-D Unfortunately, even knowing we can make our own pandan paste, we don't have fresh pandan leaves to actually do it. The frozen leaves are not fragrant at all...looks like we'll have to stick to bottled pandan paste for now.

There was once I tried to home made pandan paste, but I used it immediately without leaving it concentrated. So, the outcome was not good. Next time, I'll follow Wendy's method.

I like the strong green colour coming out from real pandan. Must smell really good! I must ask permission to cut so many pandan leaves from my mother's plant. Haha!
The cake looks very moist and it has got perfect shape of green. I bet it must be very fragrant.
It's not easy or rather convenient for me to get fresh pandan leaves so sometimes I got no choice but to rely on pandan paste. Luckily I found a trusted one. Koepoe-Koepoe Aroma Pandan paste is good though I think the colouring is a bit too intense.

Cheah, yes, you can subsitute with normal baking powder, maybe 3tsp is enough.

Thank you for sharing this recipe esp how to make own pandan paste. I love the pandan aroma while the cake is baking in the oven. I use the top pandan water to make kuih bakar and it was so fragrant, everyone loves it.

I was wondering if we can add coconut milk? If so, how much should be added and at what stage?
I made this cake today but I felt that 6tbsp was not enough. Will adding more affect its texture? I guess maybe my pandan juice was not concentrated enough :(
