Ayam Masak Merah / Malay Spicy Tomato Chicken 马来式番茄辣椒鸡

I love Ayam masak merah !! I have been cooking this nice flavorful Malay dish but have yet to update a proper recipe (brief old recipe in 2009 !!) on my blog. Nice aroma turmeric fried chicken in spicy, hint of sour from tomato and lemongrass sauce, so good !

Usually i like to cook fried Mee Hoon during lunch time, from economic fried beehoon, simple Hokkien fried mee hoon, Tom Yum fried mee hoon, Mee Siam and this yummy and spicy Malay style of fried mee hoon.

Roasted Chicken stuffed with Tomato rice 烤鸡酿番茄饭

We had this nice roasted chicken stuffed with tomato rice at a Portuguese restaurant during the Macau trip the other day. I tried to replicate this roast chicken at home recently. The original dish was deep fry the chicken, but I use hassle free method by roast the chicken in the oven ^_^.

Fan Choy a.k.a steamed rice 饭菜

I saw this Fan Choy in Honey Bee Sweet's IG. According to her, Fan Choy is a common breakfast in Singapore. It does look like Lor Mai Gai 糯米鸡 , but Fan Choy is consists of Char Siew (BBQ meat) and Hard- boiled eggs steamed with rice or glutinous rice.  I love everything with glutinous rice, immediately I make this Fan Choy ^_^.

Nasi Goreng Kampung (Malay fried rice) 马来炒饭

This fried rice really kampong style, got kangkung (water spinach), petai (stink beans), and ikan bilis ( anchovies), all are my favourite ! And I especially like the crunchy caramelized ikan bilis, so yum!

Chinese Fried Dumplings with Sweet and Sour dipping sauce 炸饺子和酸甜酱

If just eating fried dumplings alone, I feel is a bit plain, usually I prefer to cook a small bowl of sweet and sour sauce to dip with the fried dumplings. My kids can't have enough if I prepare this dumplings.

Chinese stir-fried potato strips 洋芋叉叉

This was my first time tried out this simple Chinese potato dish. According to here, 洋芋叉叉 is a popular Chinese potato dish.  I use the cast iron wok to stir fry this potato dish, and we can smell the smoky aroma (wok hei) ^_^.

Bandit Chicken Wings 土匪雞翼

From a TV food show, I learnt that this 土匪雞翼 (direct translate become Bandit Chicken Wings) is very famous now in Hong Kong. This roasted chicken wings using one of the most important ingredient in the recipe is Cumin powder 孜然粉.
I don't know why this roasted chicken wings named as Bandit chicken wings , but according to here, those bandit robbers not only robbed  luxury items but also household spices. The local people who stayed a few miles away can smell the nice aroma of the wings when the bandit robbers used the spices to roast chicken wings.  Thus they would know those bandits were not far from them and they could take precautions of those bandits.

Economic Fried Bee Hoon (Fried Rice Vermicelli) 经济炒米粉


Economic fried bee hoon (simple stir fried rice vermicelli) is a typical breakfast for Malaysian Chinese and I guess Singaporean also eating this way. The most economic version is just simple fried mee hoon, and pour with some curry sauce and sambal chili. If you want more luxury version, you can ask to add fried luncheon meat, fish balls, sausages and fried egg with extra money. Like my version here is consider luxury version of Economic fried bee hoon ^_^.

During Ramadan (fasting month), I am continuing cooking Malay cuisine. This time I get my hands on this Soto Ayam, one of the chicken soup that my family like. When we visit Malay's friend house during Raya (Muslim New Year), if we see they serve this Soto ayam, sure we enjoyed very much.

Today I share with you first one of the item to serve together with Soto, is this Bergedil, Begedil or Pegedil in Malay or potato patties .

I love this type of Malay fried chicken, full of herbs and spices, so aromatic! Whenever I attending Malay wedding, I am sure looking forward to taste this Ayam goring berempah. Yesterday I prepared this chicken to go with nasi lemak, yum!

Bangkok Chicken Rice Plate ( Khao Man Gai ) 泰式鸡饭



Nowadays I prefer to cook less oily Thai style chicken rice (only use chicken breast) than the usual Chinese Hainanese chicken rice but we still go to our favourite Hainanese chicken rice stall quite often. I had cooked this Thai style chicken rice earlier, but this time I adapted a new dipping sauce from a new cookbook that I bought during a book sale few months ago And this new dipping sauce was equally good if compare to the earlier recipe.

Hong Kong Style Swiss Chicken Wings 瑞士汁雞翼


Hong Kong Style Swiss chicken wings 瑞士汁雞翼 is a popular dish in Hong Kong but I missed to try out this dish during my visit to Hong Kong last time. Anyway, I tried out this dish the other day, it was succulent and delicious (enjoy it while hot, when turned cooled, it tasted hard ). This dish name called  瑞士汁雞翼 not because it came from Switzerland (瑞士 in Chinese). According to here, In 1860, there’s a HK style Western restaurant called Tai Ping Koon Restaurant (太平館餐廳).  The founder invented a sweet soy type of wings.  A tourist tried it and adored it.  He asked the waiter about the name of the dish.  The waiter’s reply was “Sweet Wings…”.  Due to confusion of Chinglish, the tourist mistaken it as “Swiss Wings”.  Therefore, the funny name has since lasted until the modern days.

Kai Loog Keuy / Thai Son-in-law eggs


I had this dish at a Thai restaurant on the other day. I was curious the funny name then I asked the waiter why this dish has such funny name called Son-in-law eggs, but he couldn't tell me an answer.
After I google, according to here, this little deep-fried, savoury egg dish is traditionally cooked by Thai mothers for their soon-to-be son-in-laws as a grave warning that if they decide to get a little promiscuous with their beloved daughters, their precious gems will end up boiled, deep-fried and served with sweet sauce. Thai's mothers are cute and creative right ^_^
This is a great way to get rid of leftover boiled eggs, the sweet and sour pour over fried eggs, kids especially love them.

Rendang Daging Tok (Dry Beef Rendang) 霹雳冷当牛肉


Every time during Ramadan month (Muslim fasting month), I am sure craving for a good Rendang ( I have two version here, rendang chicken and beef rendang ). The other day, my blogger friend Yan who is staying in Ipoh Perak, sent me a link and asked me to cook this Rendang Daging Tok ( a special dry rendang dish from Perak state) . And I told her I will immediately cook it, but too bad I can't send it over for her to taste my rendang ^_^.
According to here, in old time, Rendang Tok considered a special food that only served to Royal family. "Tok" refer to those renowned peoples.

Copycat KXC fried chicken (Original) 山寨版肯记炸雞


Both my son Desmond and hubby also said that this Copycat KXC fried chicken tasted like the real KXC fried chicken original flavours ^_^.
