Jaffa Sponge Cake with Orange Curd 香橙巧克力海绵蛋糕和香橙酱

Earlier i saw my Instagram friend sharing a round and big sponge cake that using my earlier cold eggs of Orange sponge cupcake recipe, Her cake turned out to be nice and no shrinkage. So i  use this method to make into this Jaffa sponge cake with orange curd for my little son's Birthday.

Japanese Dark Pearl Chocolate Chiffon Cake 日式黑珍珠戚风


This was a birthday cake that i baked for my son Lucas's 15 years old birthday the other day. It was a last minutes decision to bake this cake, and i just spent 3hrs to complete this birthday cake on his birthday. I chosen this Japanese dark pearl chocolate chiffon as the cake base because this cake is very popular among many blogger friends and the first time i tasted this cake in a bloggers gathering party, i was impressed.

Orange and Passion fruit Gateau 香橙百香果蛋糕

I received few readers asking me whether they can use Golden sponge cake to decorate with whipping cream as they scare whether or this light sponge cake can accommodate the weight from the cream. To find out the answer, I decided to bake this cake again and decorate with orange and passion fruit curd which using leftover oranges that bought the other day ,and last minutes also decided to add in passion fruit which my sister sent over for me.

Barbie Doll Cake 芭比娃娃蛋糕


Last week I was so busy, because I have to make three Birthday cakes (all my niece and nephew Birthday mainly fall on August and Sept). And this Barbie Doll Cake took two days to complete. This cake was specially for my niece who celebrate her perfect 10th Birthday last week. And I was pleased with the result and all my family was impressed with my first Barbie doll cake ^_^.

Oreo Owl Cupcakes 猫头鹰巧克力杯子蛋糕


I made this Oreo Owl Cupcakes for my son Birthday the other day. As usual, before I make the cake, I checked with him for what Birthday cake he wants first. Phew, this time he just wanted chocolate cupcakes, unlike last year he requested a Minecraft fondant cake. But I don't want to just make the ordinary chocolate cupcakes for him, so I chosen this cute Owl cupcakes that I have seen in Crystal blog.

Old-Fashioned Birthday Cake, and party foods 怀旧的生日


The other day when i had conversation about Birthday party with my hubby, and i just realized that both of us never had neither a Birthday party nor Birthday cake when we were young. Our family financial situation was not allowed to have such luxury celebration last time. When i was a kid, our family were staying at the kampung (small town) , to have a Birthday cake is big thing for us, we can only travel to big town like Klang to get Birthday cake because there were no bakery shop at our small town last time..Anyway, we never blamed our parent and we blessed for what we had last time, it also trained us become stronger and appreciate for everything that we achieving now.
Nevertheless, i still have kawan-kawan yang kaya ( rich friends) last time, so i still have chances to attend their Birthday parties, hehehe..When i flipping through those old Birthday party photos the other day, recall a lot of nice memory and nostalgia feeling about these old Birthday parties. So i decided to held an old-fashioned party for my hubby this year..

Fruity Cake

I just came back from a short trip to Hanoi, quite a fun trip, so many things to discover and so many nice foods. I will update the trip soon since i still have Japan trip have yet to finish update, and also need to start to prepare a family trip to Bali next month..
Once came back, i have to rush to make another Birthday Cake, this time is for my mother..This fruity cake also another classic and old fashioned Birthday cake beside the Black Forest Cake i done earlier..I use back the same sponge cake recipe, simply love this simple sponge cake recipe..

I would said Black Forest cake is an old fashion and classic Birthday cake. When we were young, usually we had Black Forest cake for Birthday.
I made three Black Forest cakes in a row on last week, made for my niece and nephew who all Birthday falls in the same week and same month..I realized that most of my family members' Birthday is falls in month of August....Nowadays, i try to make Birthday cake for my family members..

Pink Ombre Cake with Rosette Swiss Meringue Buttercream


Today I just collected Lucas' IC (He is 12th now) and also celebrating my daughter's 15th years Birthday. Two of them considered adults now and i can no more save some money from entrance fee, ticket fee & etc, aiyah..
The other day i asked my daughter what type of Birthday cake she wants, she said chocolate cake. But I beg her for this cake because i wanted to make this cake for longer time. She said this cake look sweet and lovely but she said a lot of colouring ler, and i told her this is only once in a year and we just eating a small piece, it is ok lar, we will not die one, hahahaha..

He is 8 years old now, a Minecraft fondant cake


Earlier i thought my son Desmond wanted an Angry Birds's Birthday cake for his birthday this year because he is a big fan of AB..I was re-confirmed with him again on last two weeks, he said he wants a Minecraft cake now but not AB...That was my 1st time heard of Minecraft, then he shown it to me, then i realized that Minecraft is a game about placing blocks to build anything you can imagine..Last two days i was busy preparing his Birthday fondant cake, luckily this cake is not that difficulut to make since all are involved with blocks..

Strawberry Mousse Cake




Last month i did not make a Birthday cake for myself because I celebrated my Birthday in the flight when we returning from Melbourne..But I still think a Birthday must have a Birthday cake..Yesterday I purposely made this Strawberry mousse cake for myself..also i want to practise first because i am planning to make the same cake for my sister's coming Birthday.

These pictures were taken with all decorative items that i bought from Melbourne, a gorgeous Donna Hay cake stand, tea towel from Royal Albert (only able to buy tea towel as the tea set is very pricey) and Pashmak Persian fairy floss 波斯棉花糖 (bought it at Queen Victoria Market).

He is 7 years old now ....

Nowadays, before my kids birthday, I will check with them what type of cake they want, no more buying from outside bakery shop. My little son Desmond requested a chocolate cake this time, a lot of cream and decorate with a lot of chocolate rice and colourful beads ( with a condition, he is the one who will decorate this !!).

He is 11 years old now, and Genoise sponge

I baked a coffee sponge cake for my son Lucas 11th Birthday few days ago. There was no big party held this time since I just organized one last year. I just prepared his favorite nasi lemak (a truly nasi lemak lover’s son,hehehe ) and fried chicken. He is big boy now and no longer wants a cake decorate with cartoon character. He is started to know how to enjoy a cup of good coffee, am thinking to get a coffee maker soon.

She turns sweet 13 today, and my new toy !!

My daughter Jeslyn turns 13 today, I baked her a Birthday cake, her favourite chocolate cake..

Since I'm poor in cake decoration, I just use her favourite chocolate "Ferrero Rocher" to decorate her birthday cake

I was adapted recipe from aunty Yochana with minor changes. My daughter love this chocolate cake very much.

Fest Chocolate cake(7” round cake tin)
(printable recipe)

100 gm. Butter or Margarine
125 gm. sugar
3 egg yolks
2 egg white
30 gm. sugar
125 gm. evaporated milk
40 gm. fresh cream (unwhipped)
100 gm. cake flour
1/2 tsp. baking powder
1/2 tsp. Bicarbonate of Soda
20 gm. cocoa powder
90 gm. sponge mix / optima flour

Frosting250 gm. chopped chocolate
200 gm. fresh cream
1 tsp. butter
10 gm. Milo or cocoa powder
• Microwave all these ingredients together and stir till smooth

Method
1. Sift cake flour, baking powder, soda and cocoa powder together, set aside.
2. Beat butter and sugar (125g) till creamy, add egg yolk one at a time.
3. Add in milk and fresh cream, mix till well combined.
4. Whisk egg white with sugar (30gm) till fluffy.
5. Mix flour mixture (1) and butter mixture(3) together, add in sponge mix flour.
6. Take 1/3 of egg white mixture, use a hand whisk to stir with flour mixture (5) till combine.
7. Fold in the balance egg white mixture till well combined.
8. Pour into cake tin, bake at pre-heated oven at 180c for about 50mins or till cake is cooked.

To assemble:
Slice cake into 3 layers and sandwich them together with the chocolate frosting, decorate as per desired (Do not chill in the fridge,because it will turned hard)

Desmond turns 6 today !!

Today Desmond turns 6, he was celebrating with his classmates in the Kindergarten. He likes Spiderman, so I decorated Spiderman on his Birthday cake with my poor cake decoration skill. I baked a basic cocoa sponge cake and decorated with fresh cream.

Ocean Cake

This was the main cake that I baked for Lucas's 10 years old Birthday party. And it was really well received by all his friend,my relatives and friends..
I have been keeping this M&M Ocean cake recipe long time ago (can't remember where I got this), when I refer to M&M website, i couldn't find the link.

So I just copy and paste this recipe in here, I also made few changes on it:-

M&M Ocean Cake
(printable recipe)

Ingredients
•1 bag MILKY WAY® Brand Miniatures –I omitted this•1 bag M&M’S® Brand Milk Chocolate Candies
•1 bag M&M’S® Brand Peanut Chocolate Candies
•2 18.25-oz. boxes favorite cake mix-use my own recipe, refer to basic sponge cake •3 cans vanilla frosting-use my own recipe, refer to Vanilla buttercream
•Food coloring (blue, green, red & yellow)
•1 cup Chinese noodles- I use Yee Mee
•2 cups ground cookie or cake crumbs
•3 8-inch round cake pans- I use 9” round cake pan

Directions
1.Unwrap the MILKY WAY® Brand Miniatures, and chop all but two of them.-I omitted this
2.Prepare the cake mix according to the package directions. - I baked sponge cake
3.Fold in the chopped candy, before transferring the batter to 3 8-inch cake pans. .-I omitted this4.Bake for 30 minutes in a preheated 350-degree oven.- I baked sponge cake
5.Set 1/2 cup of vanilla frosting aside.-I prepared Vanilla buttercream6.Using blue food coloring, tint 1-1/2 cans of the remaining vanilla frosting to the desired shade of blue.
7.Once the cake layers are cooled, sandwich blue frosting between the layers
8.set one layer on a plate and frost its top; then set the second layer on top of the first layer and frost its top; then set the third layer on top of the second layer.- I only made two layers, apply a layer of blueberries jam
9.Spread the top and sides of the cake with swirls of both blue and white frosting, to give the cake a water-like color.
10.Swirl the frosting on the top of the cake with the back of a spoon, pulling each swirl so that it looks like a wave.
11.Decorate the side of the cake.
12.here are some suggestions:
13.* Divide the remaining can of vanilla frosting into three small bowls. Tint one bowl green, one red and one yellow. Transfer each color to a reasealable plastic bag. Snip the corner of each bag.
14.* Make the schools of M&M’S® fish:
15.- Press a school of about 4 or 5 green M&M’S® Brand Milk Chocolate Candies into the side of the cake. Pipe fins and tails with green frosting.
16.- Press a school of 3 or 4 orange M&M’S® Brand Peanut Chocolate Candies, and pipe red fins and tails.
17.* M&M’S® lobsters: Use a red M&M’S® Brand Peanut Chocolate Candy for the body. Then, place red M&M’S® for the tails and claws. Pipe the claw M&M’S® with red frosting to outline its detail.
18.* M&M’S® seahorse: Use a yellow M&M’S® Brand Peanut Chocolate Candy for the body. Place a yellow M&M’S® Brand Milk Chocolate Candy to the top of the "body", and pipe a yellow frosting tail and snout.
19.* Sea grass & coral: Pipe green frosting onto the sides of the cake for sea grass. Then, press Chinese noodles into the sides of cake for coral.
20.Decorating the sea bottom:
21.* Sprinkle the cake with cookie crumbs all around like sand. Scatter M&M’S® Brand Milk Chocolate Candies around the cookie crumbs.
22.* Make a treasure chest: Trim off the top of one MILKY WAY® Brand Miniature.- I omitted this23.Place a second MILKY WAY® Brand Miniature on top like the top of a chest, keeping the lid open.- I omitted this
24.Fill the center with yellow M&M’S® Brand Milk Chocolate Candies as if they were gold!-I omitted this

**my note- you may also turn this to cup cake form, just place one decoration for each cup cake.

Macarons and Tiramisu Birthday Cake

First time in my whole entire life, I did a Birthday cake for myself. I tell myself I must make a special cake this time, so I came out with an idea to use Macarons to decorate the Tiramisu cake (1st time baked also), i spent almost a day to complete this cake.

Macarons and Tiramisu Cake

**Colourful Macarons
(printable recipe)

Almond flour 40g
Icing sugar 65g

Egg white 50g (1-2eggs)
Icing sugar 50g
Corn flour ½ tsp

Food colouring

1. Mix almond flour and icing sugar in a food processor, and give few "Pulse" to mix it well.
3. Beat egg white high speed till become foamy, gradually add in sugar until you get a glossy meringue (like cream), last add in corn flour and combine well.
4. Gently fold in flour mixture using spatula and mix well.
5. Add in food colouring.
5. Fill in the batter in a piping bag and pipe small rounds on a parchment paper.
6. Set aside to rest for 15mins.
7. Place macarons on a wooden board, bake at pre-heat oven at 130c for 3mins, and this process is to harden the shell only.
8. Remove wooden board, transfer macarons to another baking pan, bake at pre-heat oven at 150c for 15mins.
3. Spray some water on the paper, to easily remove the macarons (do it when macarons still warm). If you use non-stick parchment paper, you can save this step.
4. Store in air tight container to prevent macarons turned soggy.

**Tiramisu Cake
Recipe adapted from Moon亮, Thanks Moon for your kind sharing , but I made slight changes.
*makes a 7” cake

A) To make the Sponge cake
1 whole egg
25g caster sugar
25g cake flour
1tbsp coffee powder
10g butter (melted)
1tbsp milk

-Melt coffee powder with milk
-Beat egg, and gradually add in sugar, beat till double in volume and ribbon-like.
-Slowly fold in cake flour
-Add in coffee milk mixture and melted butter, mix well
-Bake at pre-heated oven at 180c for 30mins
-Set aside to cool the cake.

B) To make the coffee Syrup
13g sugar
25g hot water
3g coffee powder
5g Khalua (Coffee flavored liqueur)

-Mix all ingredients till dissolved, set aside.

C) To make the gelatine mixture
10g gelatine
50g hot water

-Dissolve gelatine and hot water over double-boiler, set aside.

D) In a mixing bowl, beat 250g Mascarpone cheese, set aside.

E) In a mixing bowl, with an electric mixer whisk the 250ml whipping cream until soft peak

F) To assemble the Macarons and Tiramisu Cake
10g khalua
1 Egg
100g sugar
about 24 sponge fingers (savoiardi)

- Cut off one end of the sponge fingers (same height as per baking pan). Line the sides of a 7" round baking pan* (with a removable base or use a springform pan).Save the leftover small pieces. Brush coffee syrup (B) over the sponge fingers.
-Trim off side of the sponge cake in order to place the sponge cake at the bottom of the baking pan. Brush coffee syrup over the sponge cake.
-Beat egg and sugar with a hand whisk over double-boiler, till double in volume and pale in colour.
-Pour the egg mixture to another big mixing bowl.
- Add in C, then followed by D, E, and 10g khalua.
- Spoon over half of the cheese filling. Spread evenly. Place the small leftover sponge fingers over the cheese filling and brush some coffee syrup.
-Spoon over the remaining filling. Spread and smooth the top. Cover with cling wrap and refrigerate for overnight.
-Decorate with fresh whipped cream, macarons and chocolate shavings
