Chinese paper wrapped cupcakes 紙包蛋糕

We just went to Macau for few days short visit. It was a last minutes plan, booked quite a low air fares but later only realized that the hotel rate there was quite high. Anyway, we were enjoyed many nice foods there but also tasted some foods that we don't like. This time, I have a chance to try this famous cake in Hong Kong and Macau, paper wrapped cake or cupcake 紙包蛋糕. The first one I tried actually not as nice as expected. Anyway, I found a good one at an old Char Chan Teng (local coffee shop) which they bake freshly paper wrapped cupcakes daily. Their cake was light, fluffy and full of egg aroma.

Kuih Bahulu / Ji Dan Gao 烘鸡蛋糕

Earlier I made the old-fashioned of kuih Bahulu ( egg sponge cake) by adding Soda drink method. This time I tried with difference method, adding some raising agent (use self-raising flour) and add more sugar. As I know more sugar resulted more crispy and hard crust of kuih bahulu. Even I have increased sugar, but the sweetness still acceptable, perfect to enjoy over a cup of black coffee.

Sarawak Black Cake (Kek Serikaya or Kek Hitam) 砂劳越黑蛋糕

After i made Kaya, the first thing came into my mind is to make this famous Sarawak Black Cake. I received two bottles of gula hitam (a special browning sugar for black cake) from a reader (Thanks to Angeline) few months back.
When i try to take these pictures just now, sky was dark with heavy rain, very poor lighting this time and it was so difficult to take picture with very dark and black cake ^_^..

Baked Cassava cake

When I saw My Kitchen Snippets's baked cassava cake, i immediate bookmarked but I only managed to do it after 4 months later. I was curious how cassava can make into cake with butter and flour. The ingredients are slighlty difference from what the usual Bengka Ubi (see Jane's recipe here).

Mixed fruits pastry cake, Encore! Fruity March

mixed fruits pastry cake

I would like to submit this mixed fruits pastry cake to Aspiring Baker#5 : Fruity March hosted by Bakericious before the last day of closing. I baked this cake for my sister-in-law family from Kuantan who came to visit me and stay a night with us. I know this type of cake is suitable for them, as it is less oily, not too sweet and very refreshing with all mixed fruits.

Cucur Badak ( Fried sweet potato cake with savory filling)

Cucur Badak ( Fried sweet potato cake with savory filling)

Beside Kuih Keria, Cucur Badak is one of my favorite Malay kuih-muih (local cakes and sweet treats).
Cucur Badak use a lot of local & Asian ingredients e.g sweet potato, fresh turmeric, lemongrass, kaffir lime leaves, grated coconut and etc.
