Ondeh Ondeh Swiss Roll Christmas Log Cake 班兰椰香蛋糕卷

My friends said this cake is seriously good, and requested me to take order. I told them i have no time to make, let me share the recipe here then they can try out. But they still want me to make, Lolz ^_^ The fresh grated coconut decorated on this swiss roll, look like snow on a Christmas log cake, nice!

Since i have homemade Kaya (coconut jam), immediately think of to bake this pandan sponge cake that sandwich with Kaya filling which i have long time wanted to replicate likethose selling at pasar malam (night market).

Cendol Cake 煎蕊蛋糕

I would said this is the best cake recipe that i replicated . This cendol cake was inspired from a cafe i went recently for a brunch. I love all flavours in this cake, pandan, coconut, and Gula Melaka, love it! This cake is so natural as i used only fresh ingredients like fresh pandan leaves from my garden and fresh coconut milk. The sweetness just nice for our liking, pandan aroma and light sponge cake, slightly chewy sago layer, very nice coconut mousse and yummy Gula Melaka agar-agar layer, you have to try this ^_^ Lets check the long recipe...

Pandan Sponge Cake 班兰海绵蛋糕

If you want a sponge cake not using water bath method, smooth top, minimal shrinkage and light, this is the recipe. I still prefer to use earlier basic plain sponge cake recipe but this time made into pandan flavours which using homegrown pandan leaves, so natural green and aromatic!

Pandan Coconut Ogura Chiffon Cake 班兰椰奶相思戚风蛋糕


It has been such a long time i didn't bake a Ogura cake ( similar to chiffon cake but with extra 1 whole egg). I was failed to bake this Ogura cake using water bath method earlier. The old recipes i tried was using steam bake and normal baking method. This week i decided to attempt this cake again using water bath method. After trying 3 times and adjusted the recipe, i am please to see the nice result. It has fine crumbs, and it is also light and spongy.

Pandan Hokkaido chiffon cupcakes 班兰北海道戚风小蛋糕

I can't remember how long i did not bake some Hokkaido cupcakes. Since i have some homemade concentrated pandan paste, so I use it to make few Pandan Hokkaido cupcakes. The cake was light, natural fragrance, love the pale green colour, and well matching with Chantilly cream.

Kuih Pandan Cara Manis (gula Melaka version) 斑兰小甜糕

 
I immediately bookmarked this recipe when I saw Joceline prepared this kuih.  So I can also make use of the kuih bahulu mould that sitting in the cabinet for too long. I use gula Melaka (palm sugar )instead of white sugar as suggested, it turned out like eating ondeh ondeh,  so this kuih has more coconut taste than pandan taste, sweet and light.

Kuih Talam Ubi (Tri-colours tapioca steamed cake) 三色木薯糕

Today also about tri-colours, but this time is kuih-muih (local cakes). We like this very pure Kuih Talam Ubi, all using natural ingredients, green layer is made with pandan leaves (screwpines leaves), orange layer is made with sweet potatoes and whereas the pale yellow layer is made with tapioca. I feel this is also a perfect kuih to serve during Puasa month ( In few days time, our Muslims friends will be having Puasa).

Pandan Chiffon 香兰戚风

My pandan plants grow wildly at the backyard, look very messy, so i cut off few plants and use the leaves to make pandan paste. Later i use this pandan paste to make this pandan chiffon. Nowadays i stop buying artificial pandan paste but prefer to use homemade pandan paste, love the light jade green colour and very nice pandan aroma..

Last time my mother taught me to make Brown sugar Huat Kueh ( Chinese steamed cake) using yeast method. But this time i try this method using self-raising flour and baking powder method, very easy and fast, done within 30mins.

Puteri Ayu (steamed mini pandan sponge cake) , launch of My Kedai Runcit


The other day i bought these little cute bundt moulds and thinking to use it to make jelly. I was not realized that actually peoples are using this mould to make Puteri Ayu (steamed mini sponge cake). When i saw Amelia dessert posted her Puteri Ayu, i quickly give it a try..Frankly i have never eaten this cake before..Once we tasted this, all my family members were very impressed with this mini steamed sponge cake, the 1st batched i did just gone in the same day, and they were asking for more...

Pandan Layer Cake 香兰蛋糕



I made this Pandan Layer Cake for Mother's Day celebration on last week. Together with my sisters and brother we pre-booked 8 course dinner at a Chinese restaurant nearby my house..We waited for nearly 1 and 1/2 hours before foods were served, but luckily their foods were good otherwise we will bang their tables, hahaha.. We just learnt a lesson, no more outside foods when Mother's Day celebration in the future..

Just realized that month of October left few more days to go. I have made few other type of kuihs, need to quickly post before Aspiring Baker#12: Traditional Kueh end. I have seen so many blogger friends did this Ondeh-Ondeh, this small ball with palm sugar seem is everyone's favourite. This is also one of my favourite kueh too.

This was not my 1st time making this yummy Nyona kuih (my old post here), i quite often making this kuih as this is one of my family favourite's kuih. Kuih Ketayap or Kuih Dadar is a rolled crepe (usually flavored with pandan juice) and filled with grated sweet coconut filling (flavored with gula melaka or Malaysian palm sugar).

I have been experiencing missing comments when i tried to leave a comment in some of the blogs.I have this problem with those blogs with "full page" and "Embedded below pages" comment setting, but no problem with "pop up window". Did you have this same problem? I'm not sure how to resolve this problem, sorry to some of my bloggers friend not leaving comment to you but actually i did, just my comment don't appeared in your comment box.


This month Aspiring Bakers is calling us to make Traditional Kueh (Aspiring Bakers #12: Traditional Kueh (October 2011), so i quickly make my favourite Seri Muka.

Pandan butter cake, using homemade pandan paste

I like pandan (screwpine) butter cake, but I don't like to add store bought pandan paste as they are too fragrant and artificial. Until I found that we can make pandan paste at home, i immediate bookmarked this recipe but just have time to try out last week. I like the natural green from the pandan paste and the cake smell so good.
