Mini rice dumplings 小米粽

Any foods made with glutinous rice always one of my favourite's choice. This mini rice dumpling wrapped with wanton skin idea was inspired from my recent hiking trip at Taiwan. Breakfast that served at Taichung hotel was one of the best during our stay, one of them was this steamed mini rice dumpling.

The best time to enjoy Lap Mei Fun is during CNY time, as we can easily get good quality of imported waxed meats especially from Hong Kong. I got some good one during my recent short visit to Ipoh.

During Puasa month (fasting month), usually i like to cook some Malay foods. Simple Nasi Serai (Lemongrass rice ) enjoy together with delicious Ayam bakar madu ( honey grilled chicken), they were nice combo!

Last year, we had Bubur Lambuk ( Malay porridge that served during Ramadan (fasting month) for the first time. It was given free by the staff of a supermarket while we were shopping there. My kids simply love this porridge. They even requested for second serving.

Whole Tomato Rice 整个番茄饭

I didn't know this popular Whole tomato rice until I read an article that published in a Chinese newspaper recently. Soon I returned from US trip, I immediately cooked this tomato rice since I was still recovering from jet lag, so this easy recipe just come in perfect timing. At the same time, I can also try out the new Le Creuset round French oven that I brought back from NYC.

Fan Choy a.k.a steamed rice 饭菜

I saw this Fan Choy in Honey Bee Sweet's IG. According to her, Fan Choy is a common breakfast in Singapore. It does look like Lor Mai Gai 糯米鸡 , but Fan Choy is consists of Char Siew (BBQ meat) and Hard- boiled eggs steamed with rice or glutinous rice.  I love everything with glutinous rice, immediately I make this Fan Choy ^_^.

This fried rice really kampong style, got kangkung (water spinach), petai (stink beans), and ikan bilis ( anchovies), all are my favourite ! And I especially like the crunchy caramelized ikan bilis, so yum!

I like to cook this savoury rice (Malay called this as Nasi Minyak) whenever I cook Ayam Masak Merah or Curry, because they are the best combo! Few bloggers came to my house during CNY, I cooked this rice to go with chicken curry that they brought.

Bangkok Chicken Rice Plate ( Khao Man Gai ) 泰式鸡饭



Nowadays I prefer to cook less oily Thai style chicken rice (only use chicken breast) than the usual Chinese Hainanese chicken rice but we still go to our favourite Hainanese chicken rice stall quite often. I had cooked this Thai style chicken rice earlier, but this time I adapted a new dipping sauce from a new cookbook that I bought during a book sale few months ago And this new dipping sauce was equally good if compare to the earlier recipe.

Thai-Style Chicken Rice ( Khao Man Gai ) 泰式鸡饭


If you have been to Thailand, you should know that they have very nice chicken rice. We missed to try Thai chicken rice during our trip to Bangkok. Anyway, we managed to try Thai chicken rice when we crossed over to Thai border from Kelantan the other day (I hope to update the Kelantan trip soon) . Actually only my husband ordered this chicken rice, my kids and I were ordered beef noodles instead (not bad either). And my husband told us that the chicken rice was very nice, so we packed two back to hotel and we all fighting for this yummy chicken rice, hehehe..

Nasi Kerabu Biru Kelantan


Actually I prepared this post since this afternoon till now (in between I have to prepare dinner) ^_^, because i have to write the long recipe...
I brought some keropok ikan (fish crackers) from the recent Kelantan trip, so it is the best time for me to prepare nasi kerabu and i prefer blue nasi kerabu as it look so outstanding and beautiful.
I was so impressed with my friend Gertrude (My Kitchen Snippets) prepared her nasi kerabu with so many side dishes. I was thinking to do like her. But the end i have to gave it up because i realized that it is too time consuming because have to deep fry crackers, boil salted eggs, pounded the spice ingredients, cook rice, tumis sambal, deep fry fish, cutting salad & etc..
 I have to drop the idea of prepare roast meat and Ayam Percik (special roast chicken). In fact, i spent the whole afternoon just to prepare this nasi kerabu. Anyway, we were really enjoyed this home cooked nasi kerabu !! And i was impressed how tasty the Kuah tumis and sambal kelapa that i adapted from Azie kitchen, Thanks Kak Azie !!

Yesterday I was run out of idea what to cook for dinner, checked inside kitchen cabinet and saw 1 can of baked bean and 1 can of luncheon meat. "Ting" i recall a recipe in Pig Pig's corner's and this recipe is her all time favourite, minced meat & baked bean with rice, and a sunny side up egg.

Hi all, how are you, hope you all fine and have a good start of New Year.
Sorry for not updating my blog, this is due to I have a hectic schedule of the past 2 weeks, busy with school started and arranged my little son Desmond entered to primary school. I also helped my sister (who lost her beloved husband last year) on her new house matters (she is going to move near to my area and she is temporary staying with me now) and her kids transferred school matters. Another matter i busy was to furnish my new house, shopping for curtain, sofa, dining table, and etc. I planning to move to my new house in 1-2 weeks time, so I will not have internet connection during this period but I promise I will update my blog soon the connection is up. I hope I'm able to bake some Chinese New Year cookies in my new house and share with your.

Mamak chicken curry with yellow glutinous rice

I have bookmarked this Mamak chicken curry (Mamak is a term used in Malaysia to describe the Indian Tamil Muslim community and culture) long time ago, finally I got a chance to try it out yesterday. I also cooked yellow glutinous rice to serve with this chicken curry, very similar like those in baby full-month package.

No wonder Suhaina@ My Singapore kitchen said this is a best Mamak chicken, she adapted recipe from Pete. My kids love this curry very much especially Desmond who doesn't take too spicy curry, this mild curry just perfect for him. He make this order to me a least once in a week.

To serve with Yellow glutinous rice (steamed rice with turmeric), also a good choice!

Thanks to Pete for kind sharing this yummy recipe, this Mamak chicken curry can anytime compete with those selling in outside Mamak stalls. Simply delicious !! Yellow glutinous rice adapted from Flavours Food Magazine.

Yellow glutinous rice

500g glutinous rice
100g rice
1tbsp turmeric powder
1 pc tamarind peel (asam keping)
1tsp salt or to taste
250ml coconut milk

1. Soak rice in just enough water to cover, along with turmeric powder and tamarind peel for 4hours.
2. Drain and rinse once.
3. Steam the rice over high heat for about 30mins (without adding water).
4. Stir salt till dissolved in coconut water, and add to the just cooked rice, mix and stir well.
5. Steam the rice again over high heat for another 10mins.

Mamak Chicken Curry

½ bird of chicken, cut into bite size
1 and ½ cup coconut milk
2 and ½ tbsp curry powder (meat type)
1tbsp coriander powder (serbuk ketumbar)
1tsp red chili powder
4pcs Cloves
1/2pc Cinnamon
1pc Star anise
5pcs Cardamom (buah pelage)
2 large onions
2 lemongrass
3 cloves garlic
1/2'” ginger
3 sprigs curry leaves
2 potatoes, cut into bite size
1 and ½ tsp salt or to taste
1tsp sugar
3tbsp of cooking oil
1 cup water

1. Combine curry powder,chili powder and coriander powder with little water to form a paste, set aside.
2. Blend onion, lemongrass, garlic and ginger with little water to form a paste, set aside.
3. Heat oil in a wok, add blended onion paste, stir fry till nice aroma.
4. Add in star anise, cardamom, cinnamon, clove and curry leaves, continue stir fry till fragrant.
5. Add in curry and coriander paste, pour in coconut water and water, bring to boil.
6. Put in chicken pieces and potato, stir to mix well, cook about 30mins or till chicken is cooked.
7. Seasoning with salt and sugar.
8. Dish out, serve with yellow glutinous rice, or steamed rice, or chapatti.

Thai Belacan fried rice ( shrimp paste fried rice)

We like to order this Thai Belacan fried rice when we take meal at Baby Seafood restaurant, recently I imitated and cooked this rice at home.

Thai Belacan fried rice ( shrimp paste fried rice)
(printable recipe)
4 cups raw rice (cooked, and cooled several hours or prefer store overnight)
20g Belacan (shrimp paste)
3 eggs, lightly beaten
8 cloves garlic, chopped
1 and ½ tsp salt or to taste
1/2tsp chicken stock
1/4tsp pepper
6tbsp cooking oil

300g chicken breast meat, cubed and marinate with light soy sauce, salt, sugar, sesame oil and cornstarch-deep fried and set aside

300g medium shrimps, marinate with light soy sauce, salt, sugar, sesame oil and cornstarch-deep fried and set aside

1 cucumber, cubed
1 tomato, cubed

Some Chili sambal belacan-blend fresh red chilli and seasoning with shrimp paste, lime juice, sugar and salt.

Method
1. Heat oil in a wok over high flame, add in chopped garlic, stir fry till fragrant.
2. Add shrimp paste and quickly stir fry.
3. Push garlic mixture on the side of the wok, add in egg, and scramble the egg.
4. Put in the rice, toss well to combine.
5. Add in seasonings, keep stirring until the rice starts to “jump”. Combine all the ingredients together and fry until heated through.
6. Dish out, garnish with fried chicken meat, fried shrimp, cucumber and tomto, serve hot with sambal belacan.
