Sweet sambal tumis, a CNY potluck
Today i would like to share this sweet sambal tumis (improve version from here) that i prepared for a recent CNY potluck party held at my house..I always prefer sambal tumis (mean slow stirring in Malay) with slightly sweet taste.

Nasi Lemak bungkus, one more please!
Nowadays it is hard to find a good and simple nasi lemak (coconut rice with sambal chili) that wrapped with banana leaf, brown paper with wax is widely use instead. We actually prefer those very basic and simple nasi lemak that comes with coconut rice and simple sambal chili and wrap with banana leaf.

Chinese style of Nasi Lemak, with Hae Bee Shung (Spicy dried shrimps sambal)
Why i give this nasi lemak with the name of Chinese style of nasi lemak? This is because this type of nasi lemak is selling by Chinese hawkers, i use to buy this nasi lemak for breakfast. They add Hae Bee Shung (Spicy dried shrimps sambal) instead the normal chili sambal.

Nasi Lemak Pizza
To assemble a Nasi Lemak Pizza- Replace coconut rice with pizza dough, top with sweet sambal, hard-boiled egg, cucumber, deep fried anchovies (ikan bilis) and Mozzarella cheese.

Basic Pizza Dough (adapted from Annie's eats, check out more tips and tricks from her blog, and I still looking to buy a pizza stone in order to make good pizza and bread)
Ingredients½ cup warm water
2 and 1/4tsp yeast
1 and 1/4cup water (room temp.), about 275ml
2tbsp olive oil
4 cups bread flour, about 650g
1 and 1/2tsp salt
1tbsp sugar (not in original recipe)
Method
1. Mix yeast with warm water and leave aside till frothy, about 5mins.
2. Add all ingredients and yeast mixture into a mixing bowl, slowly add in water and knead till smooth.
3. Leave to prove till double in bulk (normally about 1 hour).
4. Roll out, pull gently into small round sheet (you can adjust thickness and size to your preference).
5. Top the pizza as desired.
6. Bake at pre-heated oven at 200c for 12-15mins.

Cuttlefish Nasi Lemak
Nasi Lemak again !! This time I cooked cuttlefish sambal, the cuttlefish was prepared by my mother . She use the dried cuttlefish and soak it overnight, unlike the cuttlefish sell outside which they add some kind of chemical to speed up soak time. And I like to add some water spinach "kangkung" to my nasi lemak...

- My husband proposed himself to cook this sambal petai, he really just cook it only, because all those ingrediants e.g homemade chili paste, prawn, petai, onion & etc are prepared by me...I'm became the assistant to the Cook on that day... Anyway, I admit that he cooked quite well on this dish..
- My kids gave him thumbs up on this dish...
-In return, I prepared this Mango Lassy for him. I use the mango imported from India(bought from Jusco), this India mango is super sweet and very aroma.
Mango Lassy recipe:-
1 big mango
Natural Yogurt
Fresh Milk
ice
-just blend all above ingrediants

Nasi Lemak Lover - Special Edition

-Sambal ingredients
- Nasi Lemak( fragrant coconut rice) ingredients
- Hard-boiled eggs
-Slices of cucumber
- Fried peanuts and dried ikan bilis
- a plate of yummy Nasi Lemak
-Best to eat with a glass of cool lime water
-a banana leaf-wrapped packet of nasi lemak (nasi lemak bungkus)
Steps to cook Sambal (Nasi Lemak chilli paste) and Nasi Lemak (coconut rice) :-
To prepare the Nasi Lemak (coconut rice)
a. Place washed rice, salt and knotted pandan leaves in an electric rice cooker.
b. Pour coconut milk over the rice and leave to soak for 30mins.
c. Cook the rice.
d. Once rice is cooked, leave it warm in the rice cooker.
To prepare the basic Sambal (chilli paste)
a. Heat the oil in wok, saute blended onion paste until fragrant.
b. Add in blended dried chilli paste and continue tumis (cook) for 30mins under low heat.
c. Add water and sugar and continue tumis (cook) for another 20mins under low heat.
d. Lastly add in sliced big onion.
** blended onion paste=Bombay onion ( a lot) + garlic (little) + shallot (little)
** Must put a lot of blended onion, oil and sugar. If you prefer stronger taste of sambal, you may add in shrimp paste (belacan) .
** You may add in ikan bilis, prawn, sotong & etc to the basic sambal paste.

Nasi Lemak
Due to last minutes request and am too lazy to prepare all the herb ingrediants, so I use the ready made curry sauce ( this brand is not bad, easy and convenience). But my husband tasted the chicken curry, he still prefer my own made curry sauce....
